  • In my humble opinion the total ingredients for the 3 areas are as follows. Crushed garlic, crushed ginger, Salt, bay leaves, cloves, lemon juice & skin, water. Makes the brine. (Possibly refrigerated for at least 2 hours to tenderise the chicken & absorb the spices). Buckwheat & white flour makes up the noodles. Arborio rice, dried shitaki mushrooms & I believe smoked or dried pork bones for flavour, make up the stuffing for the chicken. Hope this helps. I stand corrected if I've made a mistake and welcome amendments. Cheers.
