Fugetsu-Do Confectionery first opened in 1903. It is now considered the oldest shop in LA’s Little Tokyo, and the oldest Japanese-American business in the country. The family-owned bakery is famous for one thing above all: mochi. Making this Japanese confection has been a long tradition for the Kito family, one that started over a century ago, when original owner Seiichi Kito first immigrated to the U.S from Japan. The art of making mochi is no easy feat, according to current owner Brian Kito, who says it took him 10 years to learn how to master the process. Crystal Lee visited Fugetsu-Do’s original location in Los Angeles to see how they make their famous ‘rainbow dango’ (bite-sized pieces of rainbow mochi), and how this family business has survived 117 years.
Insider visited Fugetsu-Do Confectionery in February 2020. You can still order Fugetsu-Do mochi and more for pick-up, or you can order online. For more information, visit www.fugetsu-do.com/ and / fugetsudo .

    • @@faithreturns333 not necessarily, the son is wearing a hat, which is with California food safety regulation. As far as the girl, she was an interviewer and doesn't work in cooking food, even if she helped make a few mochi for one day. Then as far as the dad/owner, even if he doesn't wear a hair net/hat, he serves minimal risk to food contamination because of the his short hair and being part of "front of house". But if you're concerned about hair in food, I wouldn't go to most restaurants, especially chains. Ive worked in a few while in hs and college. The things I've seen, all except WDW, the least you should worry about is hair 😭

The host is right that the texture of their mochi is incredible; I'm not a big fan of red bean paste, but the mochi is so good, that it makes the red bean paste inside better. I also tried their non-traditional chocolate ganache mochi, and it's seriously one of the best things I've ever eaten.

    • Mochi and katakuri are technically not related though. Katakuri starch, similar to potato starch, is often used in cooking, and can be very sticky like the character from ONEPIECE. Mochi is made from a special breed of extra sticky rice.
