This is the king of all mushroom pastas! We are combining my favorite three fungi to make the best mushroom pasta that you have ever tried, and then topping it with fresh summer truffle for something truly indulgent. Enjoy! :)
Ingredients:
Shiitake mushrooms - 1 handful
Oyster mushrooms - 1 handful
Brown beech mushrooms - 1 handful
1/2 summer truffle
Pappardelle - 100g
Garlic - 1 clove
Thyme - 2 sprigs
Cream - 200ml
Parmigiano-Reggiano - to taste
Butter - 1tbsp
Parsley - 1 pinch
Salt, black pepper, olive oil for seasoning

I followed your recipe carefully, yet my version turned out to be a bit tasteless in the end :( would you say that adding butter is actually crucial?
Ah that's a shame. I don't remember now if I showed it, but make sure you salt your pasta water as well as the mushrooms and the sauce. As for the butter, there's already plenty of fat in the cream, so you can skip it, if you wanted to. In hindsight, I'd actually use some finer pasta, like linguine. The ones I used are better suited for tomato sauces.
