  • I worked in a doughnut shop, briefly and a long time ago. The way we made apple fritters was to take all the scraps from making cinnamon rolls and glue them together with apple jam. Fry and glaze. I always liked the doughnut shop apple fritters, before and after I knew how they were made. So I'm going to have to try this just to compare.

  • For very light and airy apple fritters , try mixing in some diced apples and some raisins into Pâte à Choux . That's how I make New Year's Eve Dutch Oliebollen for my family .

  • Those look very nice. I make "apple fritters" by partially cooking my apples in butter with the spices then mixing them with pancake batter and cooking them the same as you would cook pancakes. Probably not as good as these, but for people who are calorie phobic, they are probably slightly lower cal.

  • Anybody else notice how carefully chef john cleaned off that spoon, and then just stuck it back into the dough and kept mixing?! Exactly what I do. All. The. Time! (had the volume on mute so maybe you commented in the voice over) but I found it charming. Gonna try these after I'm back from retreat. They look fabulous!

  • Made these today and they came out excellent. I did make a bit of a mistake I wasn't paying attention and added 1 table spoon and a half of baking powder instead of 1 teaspoon and a half. This made the batter almost double in size. it became really frothy and airy. That being said they still came out extremely good and everybody inhaled them down.

  • I agree, I would half cook the apple bits before putting them in the fritter batter. I do that when I make apple pancakes or muffins.

  • i just made them with the red apples i had in the fridge, another great recipe chef. i thought they'd be a little more sweeter than they were. and i wasn't able to make the glaze as i forgot to pickup some powdered sugar.
