    • My wife is one of those avid recipe followers. She will under no circumstances deviate or make adjustments to a recipe. She cannot deal with moisture-content, cooking-temperature, or cooking-time variations. So, she perpetually overcooks, undercooks, overseasons, or underseasons the food. We've been married about 15 years now, and I do most of the cooking. I appreciate her efforts to make dinner a few times a month, but she is a lost cause when it comes to cooking.

    • beanie weenies are good. Usually take those on day hikes. Find a bush, puncture can seals, light bush on fire. Cooked in 2-3 minutes. Hot meal.

  • My wife and I tried this today. It's one of the best things we've ever had. Score another one for Chef John! Note: we were unable to find fresh cayenne pepper in any of the grocery stores in our town so we used serranos instead.

    • I found that what sausage you use makes all the difference. Very hard to find fitting sausages in my country. You want a firm sausage with high meat content but not a regular hot dog variant and not an italian style sausage. Eastern european style sausages works best.

  • Cornbread with onions, jalapeños, and sweet cream corn mixed into it go perfectly with this recipe also andouille sausage is a nice cajun twist to the tradition. My mother is from south Louisiana and this recipe, but with he things I mentioned is exactly what she would make when me and my brother came home from welding school.

  • Wow, so I'm eating this right now and it is the bomb diggity, even with regular bell peppers (because I couldn't find poblano). The broth was a little thin so I mashed up half of the beans with a potato masher during the simmering phase, and it came out just perfect! I used half white and half red beans, and the way the hotdogs look when they cook up after scoring is so fancy. Thanks so much again, Chef!

  • I made this recipe today and I have a few comments. Dice your vegetable on the smaller side to reduce time sauteing. Be careful to not burn during this step. Add more butter and/or lower the temp if you need to extend the step. Also, be careful of salt. Hotdogs do contain a lot of salt, so watch salt addition during cooking of veggies and use low sodium chicken broth instead of regular. You can alway add more if you need to.

  • Totally made the bean soup vegetarian version because my buddy who is visiting is currently not eating meat - we suspect he's confused 🤣 Anyway, it came out great. Adding sour cream and crushed tortilla chips made it something absolutely phenomenal. Thx for the recipe Chef. BTW, on this new house subscription venture - start selling mortar and pestle sets, freakishly small wooden spoons and such. You're the best!

    • Louise Ricketts I was thinking the same. I suppose the condensed texture of frankfurters makes them more suitable for cooking in a sauce like this after being sliced, because they will stay intact better than the more loosely textured British sausage, but I'm always worried when eating hot dogs/frankfurters/etc. that I'm unwittingly eating pig lips, anuses and connective tissue along with the real meat. The dish that Chef John serves up looks great, but I think I'll try it with sausages from my local butcher.
