Super Yummy Quick-Braised Stuffed Tofu in Black Bean Sauce 豉汁酿豆腐 Chinese Minced Pork Beancurd Recipe
Serves 4 pax
INGREDIENT LIST

For the stuffed tofu
--
150g (5.3 oz) minced meat (pork or chicken)
50g (1.8 oz) fish paste
15g (0.5 oz) dried cuttlefish floss (for cooking), rinsed and cut into smaller pieces
0.5 tbsp cornflour or cornstarch
A pinch of salt
2 slabs firm tofu, weighing 250g (8.8 oz) in total
For the sauce
--
1 tsp chopped young ginger
2 shallots, chopped
3 cloves garlic, chopped
250ml (8.45 fl oz) water
1 tsp black bean paste
0.5 tsp oyster sauce
0.5 tsp sugar
A pinch of salt (or to taste)
A few dashes of white pepper
Some cornstarch solution
1 tsp sesame oil
Some chopped spring onions

    • Hi Mick. Sorry for our late reply. Yes you can freeze the tofu. It’s best if you pan fry them before freezing so that you can handle them more easily later. Hope this helps. Happy cooking!

    • Hihi Miranda. Fish sauce is different from fish paste. No worries. If you can get fish paste, you can omit them altogether. Just make it a pure meat filling. Hope this helps.

  • Please try to pronounce "flour" properly, it's not "flah" but more like "flower".

    • Most of Singaporean pronounce flour as what you called “ flah.” “ flower “ is the American way of pronouncing flour. Both ways are correct, none are incorrect. Either you prefer British English or American English. Choice is yours.
