When I worked in a cafe I remember we had a lady come in who was originally just going to have drinks, but then she found out we had gluten free bread. I have never seen anyone so *pleased* to have tea and toast. We were in a fairly rural part of the UK and when I was making small talk with her she told me we were the first place outside of Costas that actually had gluten-free options for her. Also, FYI; if you don't have gluten intolerance/allergies don't do gluten free diets. There's no health benefits to it - in fact there's evidence to suggest that it's actually bad for you.
That's sweet. I found out I had celiac in 2012 which is from when this came out and I'm grateful towards the people they were lambasting because they allowed for sooooo many more new options. I went from a shelf in an isle to an entire isle and having places with pasta, bread, and pizza offering gluten free versions. I never thought I'd be able to eat a hero again and then boom jersey Mike's comes correct with gluten free bread. They made us seem like morons but it was worth it to me. Unfortunately nobody takes my illness seriously but if that means I can eat normally then so be it.

I know one person who has legit gluten intolerance (not celiacs). I also know one who just lied about it. It was what made her "special and unique." She had no issues with gluten, but being celiac was part of her self made identity. It's people like her that make others think it's a fake condition.
Or they are allergic to wheat and several other cereal grains and it’s a simplification for ease on their part because while the gluten isn’t what they are shopping for it does usually make the whole process simpler. (I have several friends with allergies to wheat and other cereal grains and buying for them usually it’s simpler to look for gluten free and then check ingredients for the things that might differ than check from all foods)

If you have it, you'll have it for the rest of your life Celiac Disease also causes a person's immune system to attack the villi in their small intestine, which results in them shrivelling up. While a gluten allergy can definitely cause people to become very sick, it doesn't cause their immune systems to attack their villi
