  • To get rid of the "starting" issue when stuffing sausages, I recommend letting your stuffer run until the meat comes out. Put the excess back into the stuffer and place your casing over the nozzle. Now you have an airless sausage.

    • I know why scientifically that is So isotopes are dependent on the number of valence electrons in the elements outer electron cloud however you don't know where an electron is until you observe it and then it would have moved by the time you went back to re observe it

  • As someone who has lived in Albuquerque their whole life, I can say that while the flavors are indeed like what you would find here, I imagine that here, the relish would have used Hatch green chile, rather than jalapenos, or roasted Hatch green chile would have been added to the mango salsa.

    • I mean, it's a misconception that people in New Mexico eat jalapenos. They eat Chiles, but different peppers that folks likely aren't familiar to and would expand their world view have they ever get the chance to eat them with burgers or other local delicacies.

    • It's also a deeply LA-style trendy hot dog rather than something you'd expect to see in New Mexico. While delicious, the mago-lime salsa is especially a dead giveaway for when the episode was written. The writers tipped their hand a little bit too much with that one. But yeah, ABQ would almost certainly be a very bland hot dog covered in green chile sauce.

  • one of my tricks with hot dogs is to apply the messiest condiments and/or toppings first and then you put the sausage on and go from there. It's not traditional, but It does make it less messy.

  • I’d love to see Babish do another Pokémon-inspired meal, more specifically one of the Curries from Sword and Shield. I think Poffins and Pokepuffs and other Regional Delicacies might work, but the curries would be easiest due to them having large images and descriptions of how they should taste.

    • @@mythicalrock2486 well, it’s up to him. The curries that require specific Pokémon byproducts would of course be out, so no Dynamax, Slowpoke Tail, or egg (I guess ostrich egg might work, but it’s specifically shown to be a Chansey egg). Decorative might be interesting to see.

  • They *almost* got the ingredients right. Homer would be far more likely to encounter Hatch green chile relish if it was a genuine Albuquerque-style hot dog.

    • Kinda, but he was pulling from the ingredients on the dog they went with. I never really think of green chile sauce as being a relish because a relish involves a pickled product, by either using something like vinegar (which he did in the video) or by fermenting it. That's not to say that you can't use the same technique here and use green chile instead of jalapenos. Or, if you wanted to, you could make a fermented green chile salsa by using a brine and that would give it some of the qualities you could be looking for. But go to most New Mexican restaurants and the sauce is neither pickled nor fermented so... not really a relish, but just as Babish has shown, cooking is about techniques, so if one wanted to go that direction, it's free game.

  • Babish: For ease of solitary sausage stuffing, I recommend using a press. It's a cylinder with the funnel at the bottom, and uses a hand crank to push the meat out of the funnel. The whole thing can be clamped to the table or counter, or bolted in place. The ironic thing is that the hot dog wouldn't be anything like what an Albuquerque native would put on a hot dog. The hot dog is very Santa Fe style, whereas in Albuquerque it would probably be grilled onions, green chile and maybe mustard

  • I've found that once you remove the cheeks from the mango, you can then halve it lengthways and run a knife along where the flesh meets the skin. Generally it's easier with mango that has firmer flesh and may be a bit redundant if you're just going to dice it afterwards, but it works well for removing the stone and the skin so you can just work with the usable parts of the fruit. It definitely comes in handy for finer dicing/slicing and also, left whole, gives you nice, generous pieces of mango for fruit platters or grilling.
