  • I love this ritual. I used to work at restaurants and people dont really care, unless you do some really dumb stuff, but as a sommelier/waiter, that was how we defined excellence among us. Now I put on a serios face an see how they get nervous, I get a kick out it, but i always let them know I used to do that, too.

  • 3 Reasons: to separate the wine from any sediment in the bottle. Let a wine breath and to also bring it to temperature from the cooler cellar.

    • agreed. this is a competition. even when she said "I'd like everyone to know that i'm drinking this wine", it was a joke, she wasn't serious. it was all to test this man behavior in those kind of situations. this is not an easy job and he always needs to be prepared for anything.

  • Sounds to me people think this job is like waiting tables it's not... It's like being executive chef of all wines. You need to know the flavor texture regions these wines where made its actually an impossible task that's why there are only 180 or so masters at this trade.

    • Too add to this, just because you’re a master Somm doesn’t mean you know everything about wine. It just means you know more than most. You also forget things over time or don’t learn what’s current. There’s no way one person can retain every vintage for every wine produced. It’s too much and too complex since wines change over time.

  • i find interesting the fact that an event of this caliber they are using room service trolleys instead of using proper gueridons, and even worse the table clothes full of wrinkles and uneven

  • i know this is an older clip...but i want to know the lady is at the table! I love her and her commentary at the end! "i want folks to know I'm drinking the wine [...] and I'm important[...]" I love it! lmao! I know that made my guy at some bits of ease at the end of his presentation of this comp.

  • Ive seen other videos of correct way eg 1.35 arent you suppose to bring the cradle or the wine holder to the wine instead of putting the wine into the cradle/wine holder like the opposite way?

  • I actually don't think it's pretentious. America is very much a food loving country but the art of service has gone out the window. Eating out and spending time with my family is one of the few things that I'm willing to pay a lot of money for. Bad service and lack of knowledge can ruin the whole experience. The best experience is to go learn something you didn't know before (make a new sommelier friend) and enjoy a dinner you've worked terribly hard for. But different folks, different strokes.

  • Proceed to heat the bottle over the candle and tell the guests that you're bringing the wine to room temperature as it's been in the wine cellar.

    • vee tour isn’t the candle there to show transparency in the bottle as you pour the wine in the large glass and avoid the cinnamon that is at the bottom of an old wine bottle?

    • It's to see the wine flow through the neck of the bottle as you pour it into the decanteur. Ensures you don't pour the sediment and impurities that are at the bottle of the bottle.
