I just used this recipe for my fiance's birthday because he wanted a sugar free mint chocolate cake. I substituted monkfruit & allulose for the sugar, used the coffee method & added mint extract instead of vanilla. I also did a mint buttercream & it was perfection ❤

This is a great recipe! I’ve made it many times using both two nine inch pans and three eight inch pans. With three eight inch pans, the bake time is shorter…about 25 minutes instead of 35 minutes. I only made one other change: I used water that was hot but not boiling, just because with water that is fully boiling, there is some risk of the eggs in the batter being cooked.

I just made this cake for my birthday. It was absolutely delicious. My only suggestion is to increase the butter for the buttercream to 2 cups to have enough icing, and to add the sugar one cup at a time and taste. I found that after 3 cups of icing sugar, the buttercream was more than sweet enough.

Only way I measure out the flour; I fluff it with a fork, and use the same fork to add to my measuring cup. Using a cup to get the flour messes up the consistency and it isn’t right. Your channel is the only baking channel I watch; you explain clearly and don’t rush through the ingredients list and instructions. We also share a deep love for chocolate 😃
