🟡 INGREDIENTS
Lamb shoulder with bones (2 kg)
FOR THE SAUCE;
2 teaspoons of black pepper (6 g)
3 teaspoons of salt (9 g)
1 teaspoon of thyme (2 g)
Half a tea glass of olive oil (50 ml)
2 cloves of crushed garlic optional
🟡 PREPARATION
- First of all, there may be unwanted hairs on the tip of the lamb shoulder. Burn them on the stove or ask your butcher to cut off that part.
- Lamb shoulder is a meat with a fatty upper base. You can remove excess oil with the help of a knife.
- Let's make shallow scratches on the meat.
- Let's mix black pepper, salt, thyme and olive oil in a bowl. You can add crushed garlic if desired.
- Let's mix the sauce we prepared into the meat thoroughly.
- We will use 3 sheets of wax paper, but we have a tip here.
- Let's wet the oiled paper thoroughly and squeeze the water out of it.
- This process will make the meat steam.
- Let's arrange the papers so that their ends touch each other.
- Let's place the meat in the middle and wrap it carefully and tightly.
- Let's wrap it tightly again with aluminum foil in 3 layers.
-Let's put it on the oven rack
- Add water to a tray and place it at the bottom of the oven (this water will allow the meat to steam).
- Let's place the meat in the upper compartment
- Let's cook for 2.5 hours at 220 degrees with the fan active.
- After 2.5 hours, let's reduce the temperature from 220 to 120 and cook for 1 more hour.
- After a total of 3.5 hours, we can take this incredibly delicious and soft meat, open it and consume it with pleasure.
