  • My favorite BBQ place when I was a kid, which sadly no longer exists, made the best enchiladas I've ever eaten. When I tell people that they think I'm crazy. But, people in the know, will agree. Barbecue and enchiladas are a match made in heaven.

  • My favorite way to finish enchiladas is to finely dice and rinse red or white onions in ice water, finely dice some jalapeno or cerano pepper, and mix that with lime juice and fresh cilantro. It makes an extremely sharp and bright topping that cuts through the rich, soft, earthy flavors of the enchiladas and gives a freshness and crunch that perfectly completes the texture.

  • it's been my experience that, if you're going to use home made corn tortillas, you have to make them in advance and let them sit in the fridge for a day or two. when you get ready to put it all together, just get them up to room temp. fresh, just-made tortillas will pretty much disintegrate every time.
