Mediterranean Lentil Salad Recipe with Cucumber, Bell Pepper, and Fresh Herbs. People often ask me how to incorporate more heart-healthy, plant-based protein into their diet. I have one word for them: Legumes! And if I had to pick just one favorite legume, it would be lentils-this vegan lentil salad recipe is the whole package: full of delicious flavor and texture, plant-based protein, fresh veggies, and it tastes even better the next day (perfect for meal-prep!)

  • I'm two months into Mediterranean cooking and love its unapologetic nature. By that I mean after mastering a few simple basics comes with it the freedom to explore based on one's own preferences and ingredients on hand. This is lovely, btw and I can't wait to make it.

    • For me it's the colours , freshness and taste - holidays on a plate ! I'm eating more blends of herbs and spices, my cupboard is full of them . I always disliked spicy food , I think what I meant was firey hot spices not the warm fragrant spices. I'm wary of using olive oil as I'm losing weight , so I use a spray olive oil instead - not the nasty 1 calorie stuff. I've eaten like an emperor this week - fresh chicken , fish, salads , couscous, zero fat Greek Yogurt , fresh fruit and lost 2lb . Good freshly prepared food is the key ❤

    • Snap, this is a " must try" ... I use butter beans and cannellini beans in salads for fibre , I have even thrown chia seeds over salad for the health benefits and they're so tiny you don't really notice them . Lentils will be good to try I think.

    • My partner is Greek he'd definitely agree with you about the salad , it must have loads of feta sprinkled on it 😂😂. He took me out to a beautiful Turkish restaurant we both left very full and happy , we both said the flavours were amazing, I've had Turkish food before and it was good but this was exquisite.

  • What if a person has to avoid night shade vegetables. What can you substitute for the peppers?

    @ShellyStebbins@ShellyStebbins18 күн бұрын
    • You can really use any other salad veggie you enjoy. This recipe is pretty forgiving :).

      @TheMediterraneanDish@TheMediterraneanDish18 күн бұрын
    • you could do finely chopped cabbage and carrots I suppose and maybe add some other herbs to make up for the list flavor if the peppers. I'm sure it will still be good. (Also if you're concerned about lectins you can soak the lentils overnight before cooking them. It helps remove them . or so ai have read!)

    • Garlic is just simply amazing. idk too many people that wouldn’t cook with it. If you understand all the beneficial properties of fresh garlic you would start eating it raw in the morning before anything else. You’d be using garlic shampoo and taking garlic pills and allicillin pills and using garlic oil. Like she said leave it out but for the people looking to be healthy anti garlic people should create their own corner of KZhead and go make non garlic content over there. we need more garlic recipes!!

      @leighm@leighm12 күн бұрын
    • @@leighm Garlic isn't a magical food with properties that outweigh other foods. All fruits an vegetables contain essential vitamins and minerals. Spinach, carrots and broccoli are more nutrient dense than garlic yet I don't see the same obsession from individuals using these foods in every single recipe. I'm not saying garlic isn't healthy but that doesn't mean you can't be healthy with garlic. I believe the people who make the inflated claims are just people who enjoy the taste and want to make excuses for their horrible garlic breath the following day.
