Soft rotis made at home with a very detailed demonstration of each step from making the dough to rolling, cooking and applying ghee!
Ing:
2 cups wheat flour
1/2 cup wheat flour for dusting and rolling
1 cup and 2 tbsp lukewarm water
2 tbsp oil
pinch of salt (optional)
2 tbsp ghee for brushing on the rotis
Method:
Start by placing the flour in a big pan add salt if you want add the oil and massage a little then slowly add the water and bind dough, knead the dough for a good 5 min until the dough is nice and smooth. Cover and let the dough rest make the individual rounds cover with extra flour and let the dough rest for about 25 min. Take each round and flatten with rolling pin, heat a pan on the stove and bake the naan as illustrated in the video. Brush with ghee or clarified butter if desired. Enjoy!

  • Not everyone is blessed with the ability to teach effectively and there are many examples of that type of thing here on youtube, but you are one of the exceptions to that. I so appreciated feeling like I was standing right there with you in the kitchen getting a good look at the whole procedure. BTW, just as helpful was the person behind the camera as well!! Whoever they are, it is so wonderful to have sufficient closeups that are clear and well lit to understand all the intricacies of the different steps. You were right to call the recipe simple, but still take the time and effort necessary to thoroughly show us how to accomplish good results on our own. So often I want to shout at the camera person to go in closer to the "action" so that I can get a clear view of what exactly is happening!!! Thank you SO much, I am your newest subbie!!

  • I am Indian and I’m brought up eating chapatis all my life. I’ve even tried it a few times myself but they turned out to be a disaster. They always turn out hard and stiff as a plate and mostly burnt!. Thank you soo much for this detailed video! I now have confidence to give it another go.

They all helped me chop n prep the food & those are my fondest memories of them. They are older now (12,14 & 16) & can cook simple dishes on their own! I want my boys to be able to feed themselves well in college & after! My husband is a great cook & I so appreciate his momma for taking the time to teach him (all 9 of her kids are awesome cooks!) 🥰

  • The secret to rots puffing up like a balloon is very easy, you do not overcook the first side and in fact do not wait for the small bubbles to appear, if they do then it won't puff up well, you place the roti on a very hot tawa just for a few seconds, I mean few seconds like 1,2,3,4,5,6,7,8 9 and 10. then immediately flip it over and allow this side to cook for a minute or so, flip over within 10 seconds is important, by this time its colour would have changed but before it starts to bubble up, any longer than about 10 seconds you will not achieve full puffing, then you cook well the second side, until you get those brown bumps, do not let bumps become too dark as you would be burning or overcooking this side, when it seems all the second side is cooked and you then flip it back to its first side, now it will balloon up mostly by itself, some people also place this side directly on cooker flames, this has a very rapid ballooning effect and cookes well , I prefer this way and it gives a slight burnt aroma, but if you kept it on the hot tawa, a light pressure from a cloth or your spatula may speed it up, this simple time trick works every time, but you must have rested the dough for at least 30 minutes to an hour after kneading, because if you start rolling immediately after kneading it will not balloon up well .

    • A perfect or even good roti must puff up every single time - no exceptions. You're right that if the first side is cooked too long the puffing up may not happen.

    • I have to disagree with cooking the first side, I wait for bubbles to appear before turning it over - it's probably the side I cook the longest, then turn over and cook for second side , then turn back to the first side and it soon begins to puff up !

  • Back again! The instructions were so very good! Even the rolling, which has been a problem during a handful of failed attempts interspersed over 5 years, went of very well based on your advice! Thank you so very much! It took me 1.5 hours for 6 rotis, but it will all get better with practice. The rotis were excellent! I feel empowered!

  • Thank you for sharing this. I learnt to make roti with my first partner - a Gujarati Indian - and developed what I called “chapatti fingers” (the ability to cope with the heat when turning and flipping the rotisserie in the pan) 😊. However, I never could get them very round and they didn’t stay very soft. I’m going to try your techniques. I LOVE roti, chapatti, parattha (sorry for spelling errors). I regularly cook curries for my family and would like to make better Indian flatbreads to serve with them. So, once again, thank you for sharing your skill.   • Thank you so very much for this lesson. I live in Arizona and we do Fry Bread and it is like this and I had no idea how to make it. I love Indian / Pakistani food and being Scottish I love the bread I make Scones the Highland way my Grandmother taught me. Blessings to you' Heather

It took me more than 5 years to learn how to make good roti and I feel I still need tips.
