  • I'm very much a backyard boy & this video is amazing. I just bought my first mid-tier offset, after smoking on big kettles & vertical stack smokers for a couple of decades. I'm looking forward to figuring it out. My favorite is probably the kettle, it just isn't designed for the job but it can be done if you get creative. The vertical stack is easier, but I need to feed it more often & just use the amount of fuel to regulate temp. I'm not looking for excellence, I've experimented trying to get as close to "fire & forget" as possible - just trying to get consist, solid brisket/short-rib whilst being able to sleep or hang out with the guys & pound a couple of beers. I think wireless thermometers with plenty of probes is a really good "cheat" on a backyard setup, having the information graphed out really helped me understand what was happening when I made changes. I had great results with 35+ day dry aged UK Heritage beef, it's what I've got readily available that's quality & the dry aging reduces the stall time a decent amount which was invaluable for my use case. They're a little more sensitive to high heat though. Spending an hour in stall instead of 2-3 means I can knock out a pretty good brisket on a kettle and only open need to open it it twice. I still need to roll a dirty fire for a short time but it's not enough to be an issue. I learned to use is, when adding more fuel I treat it like an Asado grill for the ~15 minutes - using the radiant heat spike to almost sear the fat cap on the decal/point (I trim nearly nothing, the more fat the better for me). Mostly I learned to stop fretting about temps. The kettle is so challenging, so much radiant heat to deal live with. It's definitely different! Brisket's off my kettle have a Ton of fat on the outside, not a traditional bark - it's half way between a pan fried steak and a traditional brisket.

  • Man, I love seeing your passion come through in this video. Admittedly it's the first video of yours I've seen, but you had such quality information I HAD to subscribe. You may have the first actually informative fire management video on KZhead. Sure the other ones all got me goin on my own offset. But seeing the techniques used on the large scale simultaneously along with the small scale was super helpful. But the best part by far was the passion about sharing the information. That's my favorite thing about bbq (apart from obviously literally every part of bbq) is that we're all in it together. There are no real "secrets" among this community. The share of information so freely, and in your case the AMOUNT of information you've given us is truly awesome. Thank you! Now ya got me dying to cook!!

  • Wow!!! Truly Astounding and exactly what I've been searching for. Your explanation is in depth and really is an exquisite way of demonstrating the nature, science and wisdom that is an art form. Thank you bro, I believe you are on an Elite Level. I remember trying to impress this girl with making a fire and I was feeling cavalier trying to prove my manliness. I used up all my lighters and every matchstick and we damn near froze to death n boi she was not happy n had me take her home. As I got older n started thinking I knew everything bout startin a fire to do some grilling n smoking, I embraced myself again as I damn near burnt down the whole neighborhood and all the meat vaporized n all I had was some charcoalized bones that turned to dust on touch. I smoke everybody out of their Holmes, the Fire Department Chief and the Firemen were bent over cracking up n high=fiven each other n pointing in my direction. So this is a big deal to me to see this. I am so appreciative for your knowledge. I been breaking even right now but when I come up I won't forget about you because for real, I ain't never seen such a marvelous display of wisdom. Sincerely, Randy Chavez

  • I got a world of great content from your video HOWEVER please don’t take this the wrong way but it is NEVER NEVER okay to start your fire with gas and I’m assuming you’re talking about gasoline at the beginning of your video. I’ve had friends whose entire face looked like raw hamburger starting a fire with gasoline. Even the chances of someone taking you to court saying you caused my permanent disfiguration. What great content and information and I appreciate all you do for the BBQ community. Just protect yourself on starting a fire with gas.

  • One tip for temperature control on a backyard big box smoker: get a welding blanket or some other insulation blanket to help stabilize the main chamber temps by reducing some of the escaping radiant heat. Great video!

  • Havent even bought an offset smoker yet but loved the video. Really do appreciate both you for this. One the few videos i can find that really goes into detail i wanted to know about fire management. So in week or 2 when i get my cheap smoker hopefully this helps things go smoothly.   • Got to say, I've been trying to learn how to smoke meat here in the UK, I really appreciated that video mate. It's given me confidence in the choices I made on working off sets (they were until really recently in the UK, always really poor quality, thin steel, badly made), where I always ran them with the door open. Just about to buy myself a reasonable one (looking at a Broil King Smoke XL, or regal as it's call here ) and was almost tempted by a pellet smoker, but you've made me re-realise, that half the joy of smoking for me, is in the fire.   • Thanks for using both sizes of fire boxes. I’m in process of building a larger smoker, main reason is to get away from the heat spikes.. I live in higher altitude and oxygen is sparse and adds to the challenge of a good fire.. bonfire or bust!!

  • I cooked for the first time today on my Old Country Wrangler and I had some temp swings and a smoldering fire once that produced some not so good smoke. I recovered and the ribs were amazing but after watching your video I am excited to cook on it again and use the tips you shared. I am confident I can overcome the hiccups with what you have shown.   • This is hands down the best, true fire management video. I have my first offset since December which is my 20x42 Lonestar smoker and this video is clutch. I remember watching videos like over a decade ago of some sweet Lonestar smokers back in the day, glad to hear your getting after it. Shoot dude you might not need that basket. My way is certainly more work intensive but you have wayyy more control over what’s going on. I’ve never used a basket so I wouldn’t even know where to begin 😅

  • I was skeptical at first but being in the HVAC industry for over 30 years I was impressed by your understanding of fire management, BTU's, combustion analogy and overall knowledge of building the perfect fire. I built my own 250 gallon stick burner build about 2 years ago and am still tweaking some things but fire management is crucial. Subscribed and keep smoking!

  • Great information. I have an Old Country Pecos offset smoker and this information will be great in upping my fire management game. Thank you. The only thing I'd add is warning up the splits before putting them into the fire. I usually put my next splits on top of the fire box to help dry and warm them so they ignite quickly. Again, thank you.
