I love your tip to cover the pesto with a layer of oil. I sometimes notice my pesto dries out a bit, so the layer of oil will help a lot.

Does the film of oil prevent the loss of pesto’s green color? Very interesting! I bet it does! Yum!!
I never thought of that. The oil serves the same purpose as citrus juice to prevent the beautiful herbals colors from turning brown.

Lidia, how much salt are you adding to the large pot, ir any size. Reg. Salt, sea, salt, kosher salt. It looks like you use fine reg. Salt. Blessings
I remember from watching her PBS shows that she usually uses regular salt unless she specifically mentions something else like kosher or sea salt.
