    • On a large baking sheet, I roast oxtails, neck bones, shanks, marrows and short ribs at about 450 for 30-40 mins, then add some aromatics (carrot, celery, onion) and a whole garlic head and roast for another 10 mins. I then brush 1or 2 tbsps tomato paste onto the meat and veggies and roast 10 more mins. I transfer the meat, veggies and juices to my large cast iron dutch oven, add thyme, rosemary, bay leaves and peppercorns tied in a cheese cloth bundle and simmer for about 12 hours. The house smells soooo good on those days!

  • My mother used to feed me oxtail about once a week. I was a dancer like she was and her mom made her eat the tendon from oxtail to keep her joints supple! She passed that on to me! My daughter played soccer so i fed it to her to keep her joints supple!! Never heard of the word collagen until recently!! I am now 69 and have never had joint pain!!!

    • Am just experimenting being off caffeine and what a difference. Am also starting to drink bone broth and it's made life a whole lot more enjoyable so I see how it is helpful for athletes. Although it is difficult getting beef bones here with the joints, they seem to remove them for making supplements...

    • Tall Cedars Hello there, I read on Mark Sission’s website “mark’s daily apple” that you can use Brisket Bones because Brisket is muscle meat that means lots of collagen and cartilage. I just used these for the first time and wow the cartilage breaks down into something that looks like sea-coral. it becomes very delicate and crumbles easily so take care as you remove it if you’re separating veg, bone, and meat from each other. I’ve read such soft fragments can be puréed but I’m not scientifically evidenced based educated on any health benefits so I am unsure on this so I remove what the cartilage has turned into “coral looking” and go about my bone broth as per “the norm” if there is such a thing with so many differing beliefs on its preparation etc. Hope this helps you get around the issue with not being able to easily source good collagen bones for broth. And thank you Mary for you help on what to do with the meat and veg used in the broth making process at the end.

  • This tutorial really helped me advance my understanding of bone broth! Previously, I would basically boil my bones for 24 hours--constantly adding water as the water quickly evaporated. Then I would discard all of the spent bones and vegetables after straining everything. This technique that you present is so much more economical! I just created my first broth using your method (using a cup of red wine that I didn't particularly like instead of the ACV I was using previously) and it produced such a wonderful and gelatinous broth! I made sure to ask for an extra couple slices of the cow's foot from my local butcher. Then I used it to make your "skinny soup", adding sautéed leeks (basically the whole leek can be cut and sautéed for 45 minutes so that it is ready for the soup), carrots, onions, celery, mushrooms, and a can of black beans. Wonderful! And this time I saved my precious bones that I can tell still have a lot of life in them (along with some new vegetable scraps) so that I can make another batch of broth later this week! Thank you so much!

    • @@etm567 recently, yes. Why? Because now everyone wants to start canning. So, if im being honest, it's all the new people's fault. The price was so low and now it has skyrocketed, never mind the inflation due to Capt. Dumbass Brandon. We even had a shortage on Mason jars the last couple years. Cost of canning supplies (not jars) have gone up 50%+ depending on your area.

  • Immense cooking tips packed in a video. Only ones with tremendous experience could demonstrate endlessly and effortlessly. Not a second wasted. I see many younger KZheadrs are just replicating simplified versions of your recipe, and make up the rest with irrelevant chitchatting and jokes that nobody asks for.     • Similarly, I’m now the cook! We’ve been vegetarian but for health reasons have now been told to eat chicken and bone broth so your videos are wonderful! Can you make bone broth in an Instant Pot, as we do not have a slow cooker (and probably no space for one.

    • You can simmer your beef bones in an Instant pot for a long time, venting, or pressure cook on the meat setting.

  • I'm 43 & learning so MUCH. I'm realizing as children we were darn near starving for nutrients that we got so little of. As a baby my mom put Carnation canned milk with water & table sugar in my bottle & we didn't have meat very often. I've always been pretty sickly & have been looking for a great BB recipe.     • My mother had very well developed breasts but she claimed she was too nervous to breast feed so she hunted all over for baby bottles. I was born in 1946 and I was a post WWII baby and everything was in short supply. I too was feed Carnation evaporated milk diluted with water with powdered dextrose for sugar. I had projectile vomiting with that milk and I had failure to thrive. They did take me to a doctor who told them to put lactic acid in my milk to curdle it so it would stay down because the curds couldn’t come up. I made it but we ate terrible. My mother fed us eat a lot of bologna and Treet and canned pork ‘n beans. Hot dogs and fried potatoes and minute sausages and canned applesauce were some more of her favorites. I was very small compared to the other kids and not very strong and healthy. I have suffered with Rheumatoid Arthritis my whole adult life. I have had artificial knees for 20 years already.

    • Yep, born in the 50's and mom made us formula with Carnation milk and Karo syrup. I'm 65 and ate up with arthritis.

    • @@cindybydesign My mother did know how to fix anything if it didn’t come out of a can. We never had any fresh vegetables growing up. I remember once she said I had to eat my canned spinach and that I was going to sit in my chair till I ate it. I thought it was the most vile disgusting green slime I had ever seen.and just sit there refusing to eat it, finally after probably an hour she let me get up. If she would have used fresh spinach and made a salad with strawberries, feta cheese, pecans and a good vinaigrette dressing I would have ate it. She always claimed that everything made her so nervous and when we tried to have family Christmas get togethers we bought most everything. One year as she was unpacking things and she was scoping out store bought dip into a fancy bowl after she had taken the lid off of one of those store bought jello rings she said next year she would have to take more short cuts. We had barbecue meat from a local restaurant, buns from the store, potato chips and dip, canned beans, a cake from the store and cokes, the only thing she worked on at all was some carrot and celery sticks, and opened pickle and olive jars. Another time she tried to serve us a frozen turkey for Thanksgiving, she thought it would come cooked. We laughed but love her anyway.

    • How true! But you do not need to use oxtails. Other high cartilage bone options are patellas, knuckles, or neck bones. Hope this helps. Love, Mary

  • Mary, this is my first time ever commenting but about my second month watching. You have taught me so much! It’s like you are a blessing in disguise! My 19 year old niece came to me about a month and a half ago and wanted to learn to can. This weekend we made the most beautiful gelatinous bone broth you could imagine. We picked up our cow from the processor Saturday and we kept all the bones. Thank you so much for everything. We are mostly a carnivore family and this is just one more way you have helped us. 🤗. I will be commenting more when things slow down but I was so impressed with myself on this. I’ve been canning for years but never bone broth. You are appreciated lady. 🤗 Fellow Texan here ♥️

  • I put the bone marrow in a warm corn tortilla, add a tiny bit of sea salt and a drop of salsa, and roll up: delicious! One of my favorite restaurants in El Paso, TX, serves marrow bones as an appetizer, with a tiny knife to push out the marrow, which you then spread on warm, steamed corn tortillas, squeeze a bit of lime on it and put in some salsa, roll it up and enjoy! I have the waiter bag the boned for me, and I bring them home to make bone broth. I get neck bones and rib bones at the health food store to add to the pot.
