Recipe:
Serves 6-8
20 min prep, 3 hours total.
Stew Ingredients:
• 1 kg diced beef
• 3 tbs oil
• 2 medium onions diced
• 2 carrots diced
• 2 cups halved button mushrooms
• About 400mls Guiness or red wine or beer
• 2 tins crushed tomatoes
Stew Directions:
• Add the onion to a hot camp oven and fry it in the oil at medium/high heat until it starts to be translucent.
• Add the beef with some salt and pepper and stir it until it’s slightly browned (2-3 min)
• Add carrots and mushrooms then stir well for about 5 minutes.
• Add alcohol and tomatoes then season and stir.
• Then put the lid on the camp oven (no heat needed on top of the pot) and let it simmer on low heat for around 2-3 hours, or until the beef is really tender. Check it every 30 minutes to ensure the beef is still in some liquid (add water or beer if it’s looking dry).
• Serve with bread or mashed potatoes (some peas go well on the side too).
Mashed potatoes ingredients:
• 1.5kg of potatoes
• 150g butter
• 1tbspn salt
Mash directions:
• Cut the potatoes up in quarters and boil them in salted water until they are very soft (around 40min).
• Drain the water out, add the butter and use a wooden spoon or similar to vigorously stir the mixture until it becomes smooth(ish) - about 5 minutes. No potato masher required.
Fry the meat coated in flour first, get a good char on it, the add the rest of your ingredients. Flour will help thicken the stew!!

I've always had a good time with this kind of camp cooking. Red wine and short ribs is another good variation. Carrots, celery, tomato base & a nice cab sav or Shiraz instead of the porter. Delicious.

Looked amazing! Just perfect. And thanks for sharing that tidbit about the dehydrated orange vegetables. My mom used to make soup with this soup starter that had spices and some dehydrated vegetables in it and I always hated the way that stuff smelled. I bet it was the freezedried carrots in it!

I've cooked exactly this recipe many times but last winter my meat was awful and I think you are absolutely right that it needs to go the distance, if only I'd been patient but I had a hungry crew waiting for a feed and I went for it because happy hour had gone overtime. Thats the best part about camping, its taking the TIME to relax and enjoy the moment with people you love. Even if that means sometimes it takes a little more time for the stew to cook 🤣 have a beer and wait it out.

Harry you motivated me to cook this tonight. It was still in cast iron, but it was le crueset on the stove top. Luckily mine cooked in 1 hour in time for dinner. No complaints from the kids for a change, especially the mash with that much butter. To try over the fire next time with my bedourie! Thanks for the inspiration Harry, keep cooking the good stuff.

Thanks for sharing. Been trying something similar but with carrots and no mushrooms. Combo of tomato paste,diced tomato tin, beef stock and red wine seems to be a winner for me. Oh, and don't forget a few bay leaves and fresh TIME.
