  • Those pork scraps look delicious. I knew a old timer that would not eat his supper unless he had pork scraps with it. Years ago that was a must. This lady is a hard working womem. She knows what she's doing that's for sure.

  • On building the fire area, one point was genius. From the moment I saw her putting long pieces of wood, from different angles, facing towards the middle. All you need to do, was to push them in, to continue the fire, remarkable.

  • In the early 60's I worked for an uncle in Oldham who was a butcher, and every Monday morning I used to render all the beef fat down to make beef dripping. We used to sell it as it made the best chips.

  • That was awesome Tam !!❤❤❤ Pig and Beef fat are the only two fats that we should ever use to fry or cook in, especial when it's high heat involved. "Vegetable" oils are very practical but they make us sick, weak and then cause disease. In the best case they will makes us bloated and fat. Never use vegetable/seed oils for anything.

    • This is not the case entirely. Prolonged use of Mono saturated fats from animals leads to artery blockage, resulting in heart attacks and strokes. Hence the move away from using them in the 60s and 70s to vegetable based poly unsaturated fats which don’t have some build up in arteries but nothing like that of mono saturates. The problem is the additives that are put into vegetable oils now e.g. the emulsifiers that are put into spreads to imitate butter. Better to use pure organic olive oil as a spread; and to cut down on deep fried food be it derived from animal or vegetable based fats. Coconut oil is the best to shallow fry with. But really I think it’s best to vary from vegetable and animal based fats, bearing in mind your personal health situation with occasional use of what you shouldn’t be eating; same as for sugar consumption and processed food.

      @johnfinbarr1160@johnfinbarr116012 күн бұрын
    • @@johnfinbarr1160 True but most of that science is a part of the hijack of our health. A lot of it was corrupt to the bone and driven by the giant Crisco for profits back then !! The problem with animal fats is how they are feed! Grass fed animal fat is very healthy. The fat that comes from animals fed with pellets and GMO soy/corn are more toxic than the vegetable/seed oils! You are right about the additives use in vegetable oils, not to mention the chemicals and agents used to remove the rancid taste and smell of it. You are spot when you talk about cutting down on frying as a whole and using better choices of oils/fats. Yep, sugar is another one :). Basically, watch out for all of the processed/GMO foods, eat in moderation, exercise often and you should be okay...

      @irawardofficial@irawardofficial12 күн бұрын
    • @@johnfinbarr1160although I agree with most of what you are stating, is there actually solid modern evidence that saturated fats cause a problem? Back in the 50's the American Oil Council was very persuasive in their "data" they were funding. Seed oil extraction is with very high heat and chemicals one I believe is hexane etc. Most seed oils are GMO controlled from seed to harvest their money/food control, as an aside from the health aspect. IMHO we'll be fine with ancient fats, moderate or eliminate sugar lol.

  • Rendering down pork fat to make cooking lard for cooking and create the cooked pork rinds is something that pig farmers here in the United States up until probably 50-60 years ago. Depending on the farm, some may still do that. : ) No doubt it brought back memories of old some of your older subscribers, even if they were just of stories told by parents and grandparents. My momma always said that you wanted to get a hog hanging on the scaffold by sun-up and butchering and processing all of a hog was an all day ordeal! No doubt, it took 2-3 more days to render the pig fat, make sausage and preserve it, prepare hams for curing or the smokehouse and whatever else they did, like cooking the head to make head cheese or souse. You all may not do all of that. : ) You have a pretty sizable drove of pigs now. It is quite a task to prepare their food to keep them fed. What are your plans for them.

  • That pork oil is liquid gold! Those fried chunks of pork fat are like little pieces of love in one's mouth as well. Grandma used to render pork fat down for cooking (which is the secret to Cantonese fried rice and fried noodles) and we would get the bit of crispy pork bits to eat after all the fat was rendered out of the pork fat! This is exactly why sausage tastes so good! Sausage is at least 30%pork fat, thus when the sausage is cooked the pork fat renders out of the sausage, which in turn gives the meat enormous flavor!
