Join Rachel Stewart as she explores the weird-looking delicacies at the German meat counter and finds out if the Germans are still as hooked on meat as their reputation suggests.
Rachel moved from the UK to Germany in 2016. As a relative newcomer she casts a fresh eye over German clichés and shares her experiences of settling into German life.     • Meine Kids haben das nie erlebt, weil sie nie in Deutschland gelebt haben, aber ich habe ihnen soooooo oft davon erzaehlt. Das beste am metzger war die Fleischwurst, entweder duenne grosse Scheibe oder ne kleine dicke vom Ring.

    • ...and there is a regional butcher's specialty made from blood which is called "Panhas" and reminds even more of a black pudding... it's made in squared molds and cut in thick slices, finally to be fried in a pan.

    • Panhas is grrreat! I also know a spanish Blutwurst/Black Pudding and the French have something similiar afaik. I think this could be found in many cultures but has come a little bit out of fashion due to the international Hamburger-Steak-Schnitzel culture and the general focus on prime cuts of every kind of meat with growing wealth.

  • I think Leberkäs originated from Laiberkas. And "Laib" means "loaf", which describes the shape of the meat rather than whether it contains liver.

    • It's by itself not a taste explosion. Around here we eat it with raw onion rings and a dressing from vinegar mixed with water and salt and pepper. The more meaty suelze is severd as a main dish with fried potatoes (Bratkartoffeln) on the side. North Bavaria, Frankonia.

  • Sülze? Ah, we have that here in Sweden as well. Sylta! Delicious! My mother used to serve it with a generous sprinkling of spirit vinegar on top, to give it some spice and bite, and cold boiled potatoes. And Finnish dark rye bread on the side. It was more like a snack or a light summer lunch than a real meal. Fond memories! And I once bought a sandwich in Denmark, without knowing what it was really, that turned out to be a thin slice of very dark rye bread with a thick slice of Sülze on top. I think it was called something like "dyrelegerens smörrebröd", which I think means "the veterinarians sandwich". But I understand very little Danish, so what do I know. Anyway, they also seem to have this delicious foodstuff!

  • Very good video. There is an excellent German butchery here in Cape Town & they make very good leberkase. I always have it gebraten mit spiegel eier. Sehr gut.

    • So true! I made that experience years ago. I was just preparing a "Mettbrötchen" for myself in the presence of some US friends, not being aware of the fact that this is a No-Go for them. They probably expected I would put the whole thing into the oven. When they saw me going to eat it right away, They screamed "You are not going to eat that, are you?" You should have seen their faces when I did it anyway. 😆

  • One more: When I lived in Minneapolis, there was some news item on TV that talked about Leberkaese. The reporters translated it as "liver cheese" and made all kinds of nasty faces and comments. I was screaming at the TV, "It's neither liver nor cheese." You would think that a state with so many German immigrants would do a little digging before reporting on "liver cheese," but I was wrong.

    • Also, the "Leber" part doesn't originate from liver but from "Laib" = loaf. Laiberkas, Laiberkäs. Kas was an old word for clotted material and it was formed and baked as a loaf. So not only a dairy product.

  • I love mett! Germany has a vast and delicious variety of cold cuts! And their breads are awesome!

    • Thw bread used to be good, but hardly any bakeries still make traditional bread, it's too time consuming and therefor not cost effective (dough can take up to 24h to mature, in some cases even longer, before loafs are formed and put in the oven). The earlier industrial products were still quite good, but what is packed and sold as bread nowadays is a shame, actually. At least for a bread lover. For someone not used to the great variety and the taste, this might still be kind of an illumination, but trust me, if you have the chance to eat fresh and real traditionally manufactured bread, you'll see what I mean. Plus, many of the modern health problems regarding wheat flour come from industrialised products, as the brad will get more easily digestible the longer the dough matures. We have a bakery here where you can actually stand at the window and watch how everything is hand made and fresh. When ever I buy a rustic walnut 'baguette' (not very French, pretty Germanized and made with mainly spelt flour), still warm from the oven, all I need is French salted butter along with it (most butter to me doesn't taste much of butter anymore to me, thus whenever I do buy one it's Président, as it's the only one I found in German super markets that still tastes great). Perfect dinner and so satisfying in all regards.

  • Comparing Mett with "Bärchenwurst" is tough! First one is just minced pork with salt and pepper (highly controlled in germany!) and the latter is a highly processed kind of junk-sausage for really young kids.

  • Sulze is known as head cheese in the UK or brawn. Offal cuts along with connective tissue boiled and suspended in the gelatin that boiling the cartilage produces.

  • I was surprised when Rachel went to take a bite out of the Mettbrötchen. Most Brits I know here won’t eat them. Raw meat in a bread roll? -er - no thanks! Then I saw Rachel chickened out. Aha! I thought so!! By the way, “Blutwurst” or blood-sausage is called black-sausage in England and they prefer it fried. We have “Sulze” in England, it’s called Souse (Almost certainly from the same etymology!). A lot of people like it!

  • I believe most of these meat dishes can also be found across central and eastern Europe, and so to Croatia too. As a kid I hated the "Sültze" und "Blutwurst" and now I love them - "Hladetina" & "Krvavica" rule! ;)

Die Italiener machen es aus frischen fettfreiem Kalbs oder Pferdefleisch und egal welches Rezept, wenn alles frisch ist ist es was verdammt leckeres für zwischendurch.

  • As a German vegan myself, I can say it was sometimes difficult finding vegan options while meat is so prevalent in German culinary culture, but luckily there is a growing vegan movement in Germany that is getting very popular especially among the younger generation and since a couple of years you can also find a lot of vegan substitute products in supermarkets. My parents were also very tolerant when I decided to become vegan and my mother also became vegetarian a while after me.

    • That "Currybockwurst" is actually manufactured at the Volkswagen plant in Germany and is sold in restaurants in its six German factories. They even produce their own "Volkswagen Ketchup"...

  • Don't get me wrong: I love meat like any other young man, but all these weird meat concoctions and derivatives are not for me (although I am german). I stick to meats the way they came from the animal. I have experienced a very positive influence on my health and overall well being with the change to my current diet (probably most comparable to paleo I'd guess). So I don't see myself changing these newfound eating habits too soon.

  • I am not a vegetarian neither was anyone in my family, but based on the area we grew up in (Hunsrueck), money was tight and so meat was not often served. My greatgrandparents had a roasted chicken on Sunday and then leftovers in salad and soup for the rest of the week. They did eat cold cuts, but no other meat was served due to meat being too expensive. On holidays or for special occasions, such as birthdays, we may have meat, but in generally, I grew up with a lot of vegetarian dishes or dishes where meat was a component, like spaghetti with sauce (that had some ground beef). We did have cold cuts every day, but actual meat was not something we had every day and beef was certainly only served on special occasions. A lot of the "meat dishes" in my area had meat as a component, but mostly the dishes were vegetarian with meat being added in to give it a meat flavor - and of course there is always Maggi, the meat flavor in a bottle. Cheap, long-lasting and turning something like Griessuppe into a meat flavored dish. Also re Mett - a local supermarket had breakfast and for a fixed price you could get belegte Broetchen and of course everyone ran for the Mett rather than select cheese or Bologna. It was always funny, people standing around, staff puts out a new platter with some Mett and everyone rushes in to grab one of those treats.

  • Auch, wenn Mett schon fettig genug ist - Da muß 'Anti-Quietsch' drunter (Butter/Margarine). Was auch sehr gut geht - Braten als Aufschnitt - dann noch eine Scheibe Käse drauf - passt immer :)

  • I don't know about Germany, but in Austria you can usually also get Käseleberkäse, which is Leberkäse also consisting of small cheese pockets.

  • I never got a slice of Bärchenwurst (Bear mortadella) in the supermarket. They usually only sell freshly cut mortadella at the meat counter which is not in the form of a bear so kids will get a rolled up slice of mortadella 🙆

    • Since the 60'es West Germans go out for dinner "zum Jugoslawen“ if the want to have masses of grilled meat (served togehther with french fries AND djuvec rice) - usually in portions far beyond "all you can eat"… greek restaurants do serve a rather similar variety of grilled stuff.

    • Ourania Eirini - It is not exactly the same. Black pudding contains pearl barley, which makes it dryer and firmer than Blutwurst, but consistency apart taste wise it is as close as it gets.
