    • Same here. I told my wife the other day to pick me up a six pack and she asked me why. I told her I needed it because I was boiling up a batch of cabbage and smoking some boudin. She said, "I've never seen you put beer in the cabbage any other time". My response? There beer doesn't go in the cabbage. The beer goes in your husband.

  • I have cooked the short ribs before (it's from an older video). I followed his instructions to the letter and it turned out to be one of the most delicious things I have ever cooked.

    • @@opiumpilled find a garage sale. Buy that cheap $10 charcoal mini grill from said garage sale. Find a nice slab of ribs and wood chips. You don't need a crazy smoker to get results.

  • I love how he says you don’t need an expensive bottle of red wine to do this. Which is true. A simple 12-15 dollar bottle will do you the same as using a 80-100 dollar one

    • The wine he uses is average bordeaux french wine about 10€ perhaps for 15£ in the UK. Its a Carbernet Sauvignon and Merlot like 60/40. A good 5£ south african or australian wine will defo do the trick.

  • The short ribs look amazing - will try this today! Follow up: they were amazing! I added a couple of sprigs of rosemary and thyme for extra 'perfume' and added the chestnut mushrooms to the meat an hour before serving (they take in more of the sauce then) and stirred in the pancetta at the end before serving with Gordon's olive oil, whole-grain mustard and chive mash potato. Wonderful!

    • @@Drag0nSl4yer18 Yes, 170 Celsius. Short ribs come from the chuck section of the cow; they’re too short to be used for good steaks, so maybe that’s why they’re referred to as ‘cheap cuts’. In my opinion, anything from the chuck section is divine :)

  • When you say 170°-180°, are you speaking of farenheit or centigrade? I almost always cook my cheaper cuts by either grilling or smoking them lightly then then put them in the oven at around 165° farenheit for a few hours or so.

  • Recently found out how to make mango beurre blanc. I had it at a restaurant years ago with fish. On thee menu they called it mango butter but after learning about compound butters it just didn’t feel like the same thing. Once I found out about beurre blanc I knew it is what I’ve been looking for all these years. I love make food with alcohol even though I don’t drink and this turned out great.

    • You do know that alcohol doesn’t cook off in food like people think it does right? Most people think if they deglaze a pan with wine it magically turns to nonalcoholic when I’m reality still I probably has around 90% of the alcohol In it. Unless you light your food on fire or boil if for 2-3 hours it still contains alcohol. Just an FYI if you didn’t already know that. I have known a few people who don’t drink and still cook with wine who did not know this and stopped cooking with wine as they want to be 100% alcohol free.

  • 5:39 the salt reduces the freezing point but it's pointless to add it when the slurry is outside the fridge/freezer. It's not gonna get colder, it's going to keep warming up, it's just that the slurry will freeze at a lower temp, keeping it outside the freezer will do no good😂

  • its not really slow cooked if its baked in an oven, a true slow cooked dish needs to be in a crockpot slowcooker, this simply isn't negotiable. i've found the best slow cooked dishes i've made always comes from a slowcooker, while baking dishes in an oven takes far less time (around 2 to 3 hours), its flavor profile is much shallower compared to the 4 to 6 hours a slow cooked crockpot dish produces. both my parents and myself can attest to that. it may be old fashioned, but old fashioned dishes beat gourmet dishes any day of the week. and i know chef ramsay would agree. edit: also i agree, cheap cuts are so incredibly underrated since everyone thinks that meat with intense marbling like picañha, angus, or wagyu is the only way to go. what they dont know is that while cheap cuts are tougher since they're working muscles, they're also much more packed with flavor precisely because they're working muscles. and the best ways to treat these cuts is to smoke, braise, stew, bake, or slow cook them to perfection.

  • Well i am glad you have the time and money for this, I am rocking with a can of Heinz lentil soup, I might put some black pepper in it, a teaspoon of curry powder and maybe a dash of tabasco sauce... I think that works well...
