This may be a very intimate view into my psyche, but when I make "homemade" food for my family, to me, I'm giving a very sincere "I love you" to each of them sitting around the table. I don't say the words, but it is implied in my effort and what I sit on the table. At the same time, when someone says anything critical about what I've set on the table, if it's homemade, then it's far more personal to me. I love from-scratch cooking, but I really enjoy it when I know that those eating, love to eat, and appreciate the effort.
The pastry bag technique is genius! I've seen a lot of people made gnocchi, but you reintroduced it in a very different way! Commendable! 😊

We Italians also like to press them on the fork. Yes, it helps holding the sauce, but at the same time it gives them a better looking shape 😉 My favorite way to eat them is with butter and sage and the "saporita" spice mix. It is an amazing spice mix that contains: coriander, cinnamon, cloves, nutmeg, cumin and star anise. It is absolutely insane!!

Grandma would press a fork into each one before boiling. Said it helped them hold the sauce? It made them look more elegant anyway.

It’s a preference. Pressing the gnocchi holds the sauce well but then you lose the beautifully smooth and silky texture.

You can quickly cook potatoes in the microwave. In just 5-7 minutes, half a kilo of potatoes will be ready. Peel the potatoes, wash them, put them in a glass heat-resistant deep dish, close the glass lid and put them in the oven. You do not need to wipe the Potatoes dry, let them remain wet after washing.

Hey Mr. Handsome! 😉 You should boil the potatoes with their skin on (so they don't absorb too much water).
Squeezing the dough out of a pastry bag is a great idea. Mine get too tough from rolling them with my hands I think.
I tried making gnocchi but with another recipe and it turned out very chewy and dense because of the flour💔😭i was so excited about them next time ill definitely try your recipe👍🏻

Ah Gnocchi, who can resist them, no one I know. Quite a novel idea using a pipping bag, good call, not something I have used but will definitely try it that way, and love the idea of grated feta as well as parmesan, I am Greek but my children are half Italian to so I learned how to cook Italian, and this is their most favourite of all time, but next time they will have the Greek element added tadda, because I just have to, right!! lol

I used to know how to make good gnocchi when I was younger, but the last time I tried with a different recipe, it didn’t end well. Too chewy. I’ve been reticent to try again, but this looks simple. Logical too about the flour, and I like the idea of just using the yolk so it’s not too gloopy. The sauce will be good to make when all my little tomatoes finally ripen all at once.
