Bacon chopped x2 slices
Small onion, finely chopped 1/2 cup
Green bell pepper, finely chopped 1/4 cup
Stalk celery, finely chopped 1/8 cup
GOYA Blackeye Peas or GOYA Low Sodium Blackeye Peas, 8 oz
Sazon GOYA without Annatto, 1 packet
Cooked CANILLA Extra-Long Grain Rice, 1 cup
GOYA Adobo All-Purpose Seasoning with Pepper, to taste
GOYA Hot Pepper Sauce, to taste
Instructions:

8 oz dry GOYA Blackeye beans soaked in water for two hours
Cook 1 cup of Long Grain Rice
1/2 to 1 cup of finely chopped onion
1/2 cup of finely chopped green bell pepper
1/2 cup of finely chopped stalk celery
Cool down the cooked rice
2 slices cooked and chopped bacon
Add the chopped onions, peppers, and celery to the oiled frying pan
Cook until vegetables are tender
Prepare Sazon GOYA without Annatto
Add soaked peas to the pan
Add 1 packet of Sazon GOYA without Annatto
Add 1 tbs tomato source
Add 1/2 - 1 cup of water
Stir well
Transfer to a high-pressure cooker to cook for about 30 minutes
Transfer back to the pan and stir in cooked rice; simmer until liquid is absorbed
Add vegetables and chopped bacon to the peas and rice; simmer until done.
Season with GOYA Adobo and/or hot pepper sauce
