At 2:30 am, I went to a place specializing in pork demolition for 35 years in Seoul, South Korea. The slaughtered pigs arrived at 2:00 am and were immediately dismantled by pig part. The method of dismantling ribs, meat, loin, spine, gharbi, etc. was a day when you could feel the skill of a specialist.
새벽 2시 30분에 한국 서울 마장동에서 경력 35년 돼지 발골 전문 장소로 가보았습니다. 도축된 돼지가 새벽 2시부터 입고 가 이루어지고, 바로 돼지 부위별 발골이 이루어졌습니다. 등갈비, 삼겹살, 등심, 안심, 등뼈, 갈빗살의 발골하는 방법은 전문가의 스킬이 느껴지는 하루였습니다.

No, he does not because not "anyone" is a skilled butcher. It takes years of training to reach his level of butchering for he is a master butcher. I know because I am one too.

Je suis boucher, et cet homme travail en effet extrêmement vite ( il me faut personnellement 20 minutes pour désosser et démonter un porc ) et son couteau est extrêmement tranchant. Mais le problème est qu'il laisse bien trop de viande sur les os, chez moi chaque os sont retirés un à un et parfaitement blanc et propre. Aussi, il ne porte ni gants et tablier de protection ce qui est très dangereux.
