We asked our Mexican Moms if they could tell the difference between real, authentic Mexican food from a Taqueria vs. Mexican-style fast food from some of the most popular fast food places in the US including Taco Bell, Del Taco, El Pollo Loco, and Chipotle!

  • I feel the same about Italian food. I am Italian and we NEVER eat Italian food outside of my home.. Love this. & Thank you.. I have always felt that the Italian culture & the Mexican culture is very simular. Food Is our love language to those that hold our heart,

    • With churros it’s not too hard. The texture on a Disneyland churro for example is completely different than a churro form a taqueria and besides taste and touch u could also tell by sight which one is the “real” one. For the quesadilla that would be harder to tell by touch compared to the churro

  • We are Salvadoran and my mom is exactly the same way. She eyeballs everything and goes by how it tastes, not how it looks (although it always looks amazing). She has never written down recipes (which I am currently doing because I want to be able to make her dishes when she is gone for my family) and it is sheer perfection every time

    • Reminds me of the blind girl in Masterchef. Her mom passed away so she has to replicate her mom’s dishes from memory and how it tastes because her mom never wrote down the recipe. So smart of you to do that. Make a book of your mom’s recipe.

  • I'm not Mexican, but I love authentic Mexican food, and a key factor is the use of natural & fresh ingredients. Mexican cuisine is not big on artificial condiments which is what she meant by preservatives. I shout out to my Mexican, Hispanic brothers, your food is amazing.

    • Spanish spoken by the people of Mexico is known to focus the most on annunciation and a consistent pacing. Other countries fluxuate more and have a faster pace. Not to say you can't see/don't see mexicans speaking quickly at times but it's definitely the "clearest".

    • Mexico is a huge country with a lot of different dialects. Often tho if you want to learn Spanish central Mexico is the place to be because they talk very slow and pronounce every syllable.

    • @@tarie77 Well, I could try to help. This is what I use: Ingredients white jasmine rice sugar water cinnanom Steps: 1. Wash the rice until you don't see much starch. 2. Leave half a pound of rice in a pot of water overnight or two hours. 3. Once that's been softening in room temperature water for a while you may use a sieve to get the rice less wet. 4. Put the softened rice in a blender with a cup of water, r enough to form a thin paste. 5. Get a pitcher and put the rice flour paste in there using a silicone spatula. 6. Add a little room temperature water to the pitcher but not all of it and mix until it thins out into more of a liquid than a paste. 7. Add the sugar and cinnamon to taste. If you add less water than necessary you're less likely to add too much sugar to compensate. 8. Then add ice or leave in the fridge too get cold. I'mm sorry if this isn't specific enough. I've only ade it once myself.

  • I used to work at Chipotle, and I can guarantee there are no preservatives besides salt in any of the food. All the food besides the medium and hot salsa are made fresh every day with real ingredients. I used to make the chips and guacamole in the morning before we opened.

    • My parents came from mexico, I'm the middle child of 3 kids. I grew up on tortas, tamales, and rice and beans. I do like taco bell, only the nachos and the bean burritos. And I really just like meat. I wish my appetite was back, I really want to go to a truck and get a torta de asada. If not I'll make myself tacos.

  • A lot of Mexican-owned restaurants often Americanize their food such as adding A LOT of cheese and using cheeses that are less common in Mexico but are popular in America like cheddar and monterey/pepper jack, and mozzarella.

    • some ingredients are also harder to get or more expensive in some areas of the US, they may not be a realistic option to keep profits where they need to be. I don't mind things a little americanized as long as the food tastes good

    • Tacos in Mexico don't have cheese nor sour cream. Real tacos are in 2 mini tortillas with meat, cilantro, lime, onion and salsa. My father in law has a street taco stand and sells the best tacos I have ever had.

  • In Yakima, WA my go to Mexican restaurant is Mercedes & Family. You got the grandson working the register. Mom cooking the meat and grandma rolling the tortillas. It’s absolute heaven.

  • They’re so right, though. I live in the South and have never really had much experience with the Mexican culture. We have a considerably sized Mexican community here but they sort of keep to themselves for the most part. I grew up obviously eating Mexican style fast food and we even have a few restaurants and a couple local taco trucks started by Mexican families. The family owned businesses seemed authentic to me *UNTIL* one of the cleaning ladies at my job started bringing in meals every Thursday. Long story short, she overheard a supervisor saying he was starving but wouldn’t have time to grab lunch and she speaks decent English, so she asked if he needed a plate. One of the entry level guys (manufacturing plant) had a birthday and was Mexican, so some of the other Mexican workers did a potluck type lunch where they all cooked and brought dishes in to serve him (and an insanely good cake with fruit all over it...god 😫). Any way, she brought the supervisor a plate of food and he basically begged her to make it a regular thing and to convince her, he gave her permission to charge per plate. She and a couple of the older Mexican ladies decided to give it a shot and went around basically taking orders. They’d make a couple different things each week, so it wasn’t like you got a menu to choose from. You either bought what they had that Thursday or missed out. But in management and the engineering department, we never skipped a week. And we were NEVER disappointed. I was being served food out of the back of some lady’s Tahoe but it tasted like it came fresh out of a fantastic kitchen. The flavors, colors and textures were INSANE. Nothing like the Mexican I’d had before. Nothing even close to it. They served us cow tongue taco things once and I didn’t even care that it was cow tongue. They made it so well that I forgot, honestly. God...it’s so impressive.

    • The taco is called barbacoa and there’s more styles some people order tongue other people order the cheeks and this is really rare but some people eat the eyes as well lol so when you get Barbacoa try to be specific in which part you want unless you don’t mind eating the head of a cow oh also get add cilantro and chopped onions if you want you could caramelize them as I do to get a sweet hint when eating it 😁

    • @@MinkytheMinkY In my experience, no. And I think it’s because they’re catering to an American palette. Like even dishes that they make here that are authentic Mexican dishes, they change the recipes to fit an American tastebud but that often makes it less authentic to the original. But it may also be partly due to the inability/impracticality of sourcing certain ingredients, so they substitute those ingredients for something easily accessed here but that sacrifices some vital characteristic of the original dish. Idk

    • Maybe to keep it looking green/fresh longer? Even if they sacrifice the taste of the actual avocado. If I want lime or lemon I will add that myself sometimes the tanginess ruins the flavor for me so I no longer ask for guacamole at fast food restaurants.

    • Same I always say it tastes like powdered citric acid and it always makes my stomach hurt :/ I don’t mind chipotle but it doesn’t pass as real Mexican food. Always support your local businesses. Real fire grilled Mexican chicken is literally one of the best things on earth too ^_^

  • Right at the start, I agree-it's all about the love being put into the food. Growing up, my best friend's mom was Mexican and she fed me just the same as if I was her own child. So whenever my mom packed me Korean food for lunch, I would share it with my friend's mom.

There’s dirty people and clean people no matter the race but I just commonly saw Mexicans constantly clean up after themselves 😭

  • They are spot on. With very few exceptions like Chipotle, it’s not about the difference in recipe. American fast food is highly processed, made for low price and high volume, because the point isn’t to make great food, it’s to make cheap food quickly. Even the difference between American fast food and a chain or franchise that makes the same things out of fresh, whole ingredients, it’s obvious-like McDonald’s versus In ‘n’ Out or Kua Aina-very close in price, but the fast food can’t pass for homemade or diner quality food. Chipolte is a good example of where they make quality fresh food, but it’s not like the real thing because the customer has to tell them what to put in it. You get better food from a food truck.

    • Let’s be real here, a lot of Mexicans that own food trucks and restaurants also serve really crappy food, that’s also cooked in large amounts and served with the crappiest beans as filler to lower costs. And it’s usually always the same things, like tacos, burritos, nachos, and other variations with tortillas, 😷 😴. You rarely see real Mexican food like Chiles en Nogada or Mixiotes.

  • My mom always has said that true Mexican cooking is flavorful and the love transcends in the food. I can always tells authentic Mexican food over someone who is from here. The spices and the profiles is what gives it away every time

  • That's so true, so many restaurants do too much with the seasoning. It's a labor of love and every ingredient should come thru and not be muted by excessive lime and cumin. Sometimes less really is more.

    • I grew up in very southern California, whenever I visit other states I get culture shock because... Where's the flavor? The spice? The people? I swear other Mexicans don't exist up north. I have to move out of California soon because it's too expensive, I'm gonna miss my people and food so bad :(

    • The best consistently good mexican food I've had has been in Chicago. Very large mexican population and it shows. I have been to Mexico city now probably at least 10 times and didn't find the quality of the meat or cheeses nearly as high.

  • Xochitl is so funny with some of her reactions! Yeah, even though the chicken quesadilla is one of the most popular items on Taco Bell's menu, does NOT make it a quesadilla! That thing is a grilled cheese sandwich with flour tortilla instead of white bread, with 4 pieces of diced chicken in it.

  • To be fair, Chipotle guac is just basic guac: avocado, lime, red onion, cilantro, jalepeno, salt, no artificial preservatives, no tomatoes either. It does tend to be much more smooth/pulverized though

    • We do use cumin in Mexican cuisine, but the seeds not the powder, also, we don't overseason. We do make what they call "Spanish" rice but we call it sopa de arroz rojo (we have sopa de arroz en verde, blanco, con mantequilla, etc.. ) here in México.

  • The best tacos I’ve ever had in my life where when my husband and I went to Maui on our honeymoon and we found this food truck, and the people making them only spoke Spanish, and it said they were from Mexico on the truck. It was so fresh, and delicious. I’ve literally dreamed about them a few times, especially when I’ve been pregnant. Nothing like the authentic thing when it comes to certain types of food.

    • On Spain Churros are not glazed, we put standar granulated sugar, and we can dip them in hot chocolate, we don't put cinnamon and we don't put butter in the dough mix.

  • For the guacamole... everyone likes it different. I like to put allot lemon/lime in it, because I enjoy a distinct sourness. I feel like it pairs well with chips or other food. Then again I don't put in tomatoes most of the time, we prefer to make a Pico de Gallo on the side here. I hate preservative. Most food with preservative taste a little bit like paper... if not for the spices used.

  • One of my first jobs was taco bell, after being fired i rarely went back. Had a hard time getting into authentic Mexican food so floated along for a while. Eventually so long goes by I have irresistible craving for tacos. Got more interested in trying the different foods so often try to try something I haven't had before when going to taqueria. Yum yum yum. Now having Mexican neighbors, often invited over for food & bringing over plates, I'm getting a little worried I might get burnt out on Mexican food. 😆 That & Asian foods still top favorites though.

  • The cafeteria at my work had this great salsa, but we could all tell when it was made by a different person. The manager said it's the same recipe but when you use fresh ingredients there is a difference in taste. When Alice made it she adjusted the seasoning to balance out for the flavor things like the tomatoes.
