6 Top French Recipes You Need to Cook
1) French Chicken Tarragon or Poulet à l'estragon is a braised chicken in a juicy creamy tarragon sauce. Tarragon is such an underused aromatic herb, yet it marries so well with chicken. Poulet a l'estragon or chicken tarragon is a common French dish you find in many fine restaurants. Now you can make this restaurant worthy dish at home. Absolutely amazing! I make your chicken with tarragon at least once a month, my husband's favorite chicken dish. Steak Pepper steak with brandy sauce is simply mouth-watering and cooked to perfection. The presentation is simple yet elegant and oh-so-tasteful. And of course, there's Whiskey

I have a small thing to say about your pepper steak though. I consider a mistake to coat the meat with crushed pepper from the beginning, as the pepper will burn and develop a bitter taste, I find best to begin my meat roasting only with salt, and in butter with a hint of olive oil. A minute before my meat is cooked to my liking, then I will coat with crushed peppercorns. This last minute is plenty enough to boost the peppery flavor, and I then foil my steaks tightly on aluminum foil for 5 to 10 minutes. The pepper will infuse into the steaks even more 😉
While it's possible to burn the pepper if fat is too hot, it's unlikely with cracked pepper which is thicker. The idea is to create a nice pepper crust that can only be done cooked from the start. But I appreciate your input nevertheless, probably more valid to people who like their steaks well done. Cheers.

Wow, pepper steak...and of course delicious green beans! I wish so much that I could get fresh tarragon here in my part of Spain. Sometimes 'tarragon' is offered in a garden center but this is always the Russian tarragon and not the Frech tarragon. Two different but in the same botanical family...with the French one, of course being superior. Thanks again, Joel!

@@recipe30 Russian tarragon can be grown from seed...but the taste is...not good at all. It is best for decorative garden and pot purposes. The true French tarragon is Artemisia dracunculus and its seeds are sterile. So, propagation is only by root division. Sigh. My plan C, is to ask friends to bring me a few pots from Germany in September when they come back. More sighs. Have a great week, Joel!😘

Hi Joel, tnx for those recipes, all look great! Started with Poulet d'Estragon, great sauce, poulet is gourgeous, esp. drumsticks. Thinking about a wine to match it. My first idea was to get some younger Pinot Noir, but once we tasted it, I see now that smth more structured and tannic is gonna work here better. What would you suggest?
