In this episode of 'Price Points', Epicurious challenges ice cream expert Jeni Britton Bauer to guess which one of two ice creams is more expensive. Jeni breaks down vanilla ice cream, chocolate ice cream, strawberry ice cream, coffee ice cream, mint chocolate chip ice cream, and birthday cake ice cream. For each flavor, Jeni looks at, smells, and taste tests before guessing which ice cream costs more. Once the prices are revealed, she explains why.

    • So true. I don’t know if Epicurious has wardrobe and hair&make up department, but all the experts are and dress like their object of expertise. Cheese expert has yellow shirt, mushroom was yellow and brown, chocolate was dressed in black and white, and ice cream expert has bright cold colored clothes and a fluffy, “dollopy” hairdo.

  • I had the very good fortune to work under Mrs. Britton-Bauer at the Jeni's production kitchen for a couple of years. Insanely smart, knowledgeable, talented, charming human being! Glad that more and more people (and retailers) are all about her products . (P.S. If you've had her salty caramel ice cream recently, there's a good chance I made the caramel! bon apetit!)

    • That's not air, though. It's a noble gas (which doesn't interact with flavor, while air does) they use to inflate the bag and keep the chips intact. They used to sell potato chips in tin cans; you don't want to try those after a week.

    • They can make the bag small and put in less noble gas. But they intentionally make a huge packet with more air than chips. Don't try to justify their scam...

The reason why there's so much air in a bag of chips is to reduce the likelihood of all of the chips being crushed under their own weight during transportation. The extra gas is there to act as a cushion to prevent your potato chips from turning into potato crumbs.

    • It's Nitrogen not air, (although nitrogen makes up 78% of air). It's added so chips don't oxidize in the bag and become stale.

  • I think sometimes food experts can be sort of snobbish when it comes to their area of expertise. I really like that she kept on repeating that it's all about personal preference, that the more expensive ice cream isn't always the best (and sometimes not even the best quality), and that it's about what you're looking for in an ice cream. As someone who just discovered how amazing Walmart brand ice cream can be (at $2 a carton) I can completely relate!

    • Fun fact: Ben Cohen and Jerry Greenfield, creators of Ben & Jerry's, didn't initially plan on going into the ice cream business. They knew they wanted to open a food business together, but only settled on ice cream after they learned that bagel-making equipment was too expensive for them to afford. Other fun fact: the reason Ben & Jerry's relies on mixed in ingredients so much is because Ben Cohen has severe anosmia (he can't smell, which is a big part of taste), and as such had a strong preference for textural contrast in his food.

    • dianegron they went down hill after being bought out. It used to be a family run creamery in vermont but was taken over by a swedish company. I lived in new england and ben and jerry quality went down hill but are priced high.

    • I find that the chocolate chips in the majority of the ice cream I've tried isn't very good. For instance, it's not real dark, crisp chocolate. It's something I don't know, plastic-y and chewy with no real good chocolate flavor. I'm saying this as a (dark) chocolate lover.

    • Which I loved about her too. There's an obvious difference between mass produced factory ice cream, and more homemade style ice cream. But it gets to a point where the bells and whistles don't add to the ice cream experience. I could hear her talk about ice cream all day.

  • I love how the experts aren't snobby about the food in that a higher price point does not necessarily equal a better product and they won't dismiss something simply because it's cheaper.

    • Well, higher quality ice cream usually means more expensive ingredients. To create a solid business you should be making more than you're spending (I think that's kind of obvious, but whatever), so, to cover the more expensive ingredients, you would naturally charge more for your product. Plus, people will usually pay more for more well-made, more natural products rather than cheaply made, chemical-chalked products.

  • I really quite enjoyed this one, this lady is professional without being pretentious, and notes that individual tastes may differe from what you'd expect comparatively to the common concept that more expensive = automatically better. Ice cream is something that I've always loved, just because the blank canvas of cream and sugar(flavor wise) can be transformed into basically anything that someone might want to, even if as we've learned from Iron Chef, maybe some flavor combinations aren't such a fantastic idea even if they are creative.

  • I’ve been obsessed with these and watching 1-2 per day on lunch breaks. They’re all amazing but this was the first one I found touching. My eyes actually welled up with tears of how passionate and thoughtful she is. I have only ever bought the cheapest ice cream in the aisle; that will change next time I shop.

  • It's amazing how knowledgeable people can be on different topics. To me, ice cream is ice cream, and I probably wouldn't notice too much of a difference between the same flavors of different brands. I find it fascinating how many subtle differences she can spot. I'm this way with orchestral music... I've spent over half my life in various orchestras, and every time I listen to a piece, I hear something different. I try to pick out each section... especially strings, and listen to how all the parts weave together. My sister, however, claims that every piece sounds the same! Lol. When people are so passionate about a subject, I find their depth of knowledge a bit fascinating. 👧😁

  • Her Pineapple Upsidedown Cake is now my #1 favorite. I love all her flavors, but it's the perfect balance of sweet and tangy. Her Savannah Mint is also so fabulous. You can taste butter in her Maple Pancakes, too. So many great options and she's so creative.

  • mint chocolate chip is my favorite ice cream flavor, but i started making my own mint simple syrup from the mint in my garden and now no store bought mint ice cream can compare! they're all flavored like mint candy and such, which is good, but i love love love the fresh, herbal, green flavor of my homemade mint syrup!

    • She had a shop in Columbus when I worked at an art glass nonprofit & she always donated to events, I remember her giving us so much ice cream. This was back around 2007 and I think she had a salted caramel back then. People loved it.

  • When I was a kid, my family went to this big camp church gathering every year. People from all over the state got together at a large campground that happened to be right next to a commercial mint farm. In the middle of summer, hot as it gets in Oregon, there would be harvested piles of mint like giant haystacks all over an adjacent field and they steamed in the sun. The smell of fresh mint still reminds me of the retching illness this caused. More than one person fell to their knees heaving when walking too close to that mint field. It was my first real example of the power of overwhelming smell.

    • Not me as some aren't good. I'll stick to Breyers and Mayfield for cheap ice cream and Häagen-Dazs for my slightly more expensive ice cream and Jeni's when I want to splurge. I like uncomplicated flavors so I'm not a huge fan of Ben & Jerry's as some of their flavors are overly complicated.

  • This tasting with Jeni Britton Bauer is absolutely the best "Price Points" video you have done!! Fantastic! I love how she balanced the importance of a nostalgic flavor of ice cream against the qualities of a more expensive ice cream. She clearly demonstrated that a more expensive ice cream is not always the "best" ice cream and that having the flavors you remember as a kid can actually more satisfying. The knowledge of the complexities involved in making each different flavor (especially strawberry) was truly instructional. This was a difficult tasting but she excelled!! Her information about spiders and mint reinforced my dislike for mint. 😂

  • When it comes to mint chip I'm always going to go for the cheaper option, poorly for the nostalgia it brings me and all the extra chocolate ships. I am a child at heart and will always love the more candy like mint chip ice creams. On another note, this video was actually pretty interesting. Learned some new stuff and honestly enjoyed it!

    • I think because cheaper ice cream all have more stabilisers and that can cost your mouth and affect the taste of the next ice cream. Plus, it's more likely will be masked with sugar and will he too sweet.

  • These videos are fantastic. The gumminess of stabilizers ALWAYS bothers me, (Basking Robbins, Cold Stone, etc) and the idea of coffee ice cream TASTING like good coffee SMELLS is so helpful! Fresh ingredients and labor really does up the cost, hot damn! Did anyone else learn why they would do when making ice cream at home?
