Traditional German Snack Stand with Potato Pancakes and Egg Pancakes | Street Food Berlin Germany

In our new Street Food Video in Berlin we visit the oldest Puffer Snack Bar in Berlin and invite you on a culinary journey of German Cuisine. Potato Pancakes and egg Pancakes are a traditional Dish of German, Bohemian and Austrian Cuisine. When it comes to Pancakes, it is likely that they come from medieval Europe. At that time, Dishes were prepared that were very similar to the Omelet. By adding Flour, the first Pancakes were created.
The Pufferimbiss at Hermannplatz Kreuzberg on the border with Neukölln - also often referred to as Kreuzkölln - is the only specialized Snack Bar in Berlin that has been offering its customers fresh and handmade traditional German Street Food such as Grandma's, Potato Pancakes and Egg Pancakes every day since 1986. If you haven't been there yet, you're missing out.

As the Boss of the Puffer Imbiss says, it depends on the quality of the ingredients: the eggs and potatoes are the most important components and the good vegetable fat is also the cornerstone for almost 40 years of consistent quality.

  • My mother was from Germany. I grew up eating potato pancakes. They were always served with a tall glass of cold buttermilk with a dash of salt in it. Those who didn't like buttermilk, would have applesauce with them or have both like I did! Simply the best!

  • I'm 75 yo now... my great grandfather from Germany, jumped ship as a teen, in NYC.... he spoke with a thick accent. He lived until I was an adult with babies.... as a child, Sunday mornings was a treat to walk to his house where fresh potato pancakes were being made. I still love them to this day... as a child it was with homemade apple sauce, but we now eat them with butter, salt & pepper, topped with sour cream; my grand children have introduced using ketchup.... each generation has their own toppings. But everyone is happy when potato pancakes are made!! Thank you for sharing this -- I look forward to following you adventures.

  • I watched this with amazement. Everything prepped fresh and cooked to order. I watched his cooking on the flat top and knew he was using clarified butter. That wonderful butter taste isn’t easy to do when cooking for the masses. The tell is there was no smoking while he was cooking at a med to hi temp. Great food, well prepared and thoughtfully presented.

    • No, I’d bet that was crisco for sure. But hoping it was coconut oil! Clarified butter (ghee) is yellow, not white. And VERY EXPENSIVE.

  • My dad was German and would always make potato pancakes, he would be cooking them as we stood beside him they didn’t even make it to the plate. He passed away 2 years ago miss him so much, we no longer have potato pancakes as nobody in the family can cook them quite like my dad.

    • @@Luke1556 Nun ja, jeder hat so seine Rezeptur. Ich kenne es von meiner Oma auch nur mit Wasser, da meine Oma noch den Krieg erlebt hatte - vermute mal auch die des Besitzers. Manche nehmen überhaupt keine Flüssigkeit dazu, dann werden sie natürlich etwas fester und noch krosser. Klar, geht auch mit Milch, aber der Pufferimbiss ist nicht umsonst seit fast 40-Jahren extrem beliebt und das schmeckt man auch. Er hat passend zu den großen Mengen und der Bratfläche die Rezeptur optimiert. Du musst bitte auch bedenken, dass man Rezepte nicht einfach unendlich hochskalieren kann. Vermute daher auch, dass sie mit Milch auf der Bratfläche sowieso extrem dunkel werden würden, da man ja Bratgerichten gerne Milch hinzufügt, damit es eine schöne Kruste gibt. Aber die haben die Puffer ja so schon. Also von verkacken kann hier keine Rede sein ;)✌

    • @@Luke1556 Pfannkuchen werden ja auch traditionell mit Wasser gemacht. Ich nehme für meine Mehl, Zucker, Vanillezucker, Zimt, Salz, etwas Backpulver (statt Eier), Wasser und kleingeschnittene Apfelstücke. Wenn man sie besonders kross haben will, kommt noch ein Schuss Mineralwasser mit viel Kohlensäure in den Teig.

Most mornings she would help make those Potatoe pancakes to go along with breakfast for the family and farm hands. She would also make them for us when we came to her house for supper. Such wonderful memories. My utmost respect to you sir for the very hard work that your put in to your business.

  • My mom is German and she made wonderful potato pancakes with homemade applesauce or homage apple butter! Good memories. I made them for my daughter and now my grandkids. New memories with them. They also love them! She also made crapes with sugar and cinnamon or homemade jam. She had three frying pans going all at one time for seven hungry children! I’m good to use just one pan. I’m not as good as she is to juggle three frying pans at one time! Now we all make crapes for our children and grandchildren and they also learn to make them!

I told my son a few years ago that he should open a stand like this Man has done but he wasn't interested, shame because people Love them! They look so delicious!   • This brings back so many beautiful memories from my childhood. Leftover mashed potatoes made into potato pancakes for breakfast the next morning. A delicious recipe passed down from my German great-grandmother. We'd have them with fried apples or sour cream & chives. I haven't had them for decades. I think it is about time I rectify that!   • This has brought so many memories back for me that I am nearly in tears as my mother was from Berlin and used to cook these dishes for us and I did the same for my sons who, in turn, loved them. Pureed apple is very easy to make and very economical. Here in the uk, we have bramley apples which are large, packed with flavour which she declared as the best. Just remove the flower and stalk, chop up into rough chunks including skin etc using minimum water. Cook gently. Bash through a sieve, scraping off the thick puree from the base until there are only the remains of the core and the fine layer of the outer skin, no pulp left. This is important as the last remains will thicken the puree. Perfect on the pancakes or simply with a scoop of ice cream. Mentioned was also sugar and cinnamon which is also divine as a seasoning. Simply mix baking (castor) sugar and cinnamon and store in a jar. Perfect on apple puree, breakfast porridge, french toast etc, Thank you so much for reminding me of the debt I owe her and my roots in Berlin.

  • My Oma would make us kids these. And yummmm. Now I’m wanting to make them for my Scottish husband. We’d have them with a touch of salt and sour cream or seedless boysenberry or blackberry jam for a sweet treat, or along side sourkraut and brats for a meal.     • @@moodifoodiberlin My mom would used leftover mashed potatoes with shredded onions, and she fried them in lard or bacon fat. LOL, I was raised in the 50's and we always had rendered bacon fat available. But I must say they were SOOOO delicious! I'm considering using leeks instead of onion to make my potato pancakes for the holidays. Any thoughts?

    • The recipe is quite simple. Potatoes, onions, eggs, leek or spring onion, salt, pepper, nutmeg and a little flour to bind. Grate the potato skins and onions. Cut leeks into small pieces. Mix everything, season to taste and let rest a little. Then fry in fat or oil. We traditionally serve them with applesauce.

    • @generationwtf7695 Sei froh, das du diese Bude nicht gefunden hast. Weder die Reibekuchen noch die Eierpfannkuchen entsprechen der Norm. Ich bin gebürtige Rheinländerin und weiß wie man Reibekuchen richtig zubereitet. Mehl hat an dem Teig gar nichts zu suchen . Und der Typ haut das Tütenweise in den Kartoffelteig... Allenfalls ist ein wenig Kartoffelstärke erlaubt. Zwiebeln fehlen total in dem Teig . Von dem Eierkuchenteig ganz zu schweigen. Das ist nur Pampe. Das der Mann überhaupt Kunden hat, wundert mich. Aber leider hat die Esskultur in Deutschland sehr gelitten. Dazu kommt, das er Apfelmus aus dem Tetrapack serviert und für dieses Küchenunglück auch noch 4 Euro verlangt. 👎👎👎👎

    • @karmesindryade Ja, das ist heute leider selten geworden. Beim Fett für das Ausbacken würde ich keine Kompromisse eingehen. Eierpfannkuchen am liebsten in Butter und Kartoffelpfannkuchen in gutem Rapsöl. Ich weiß, dass es in den großen Mengen recht teuer wird, aber ich würde dann für so einen Pfannkuchen auch gerne einen Euro mehr bezahlen. Ansonsten finde ich auch, dass die Preise für die hausgemachten Gerichte sehr fair sind.

    • genau alles ohne Chemie, nur bisschen künstliches Vanille Aroma, richtig gesunde Nutella plempe, industriell behandelte Kartoffeln und zwiebelchen, Palmfett, billige Kirschen mit Verdickungsmittel im Wasserkocher verfeinert, und lecker Apfelmus aus dem TetraPack............, schön die Eierpackung auf das Abtropfblech für die fertigen Kartoffelpuffer abgestellt, mmhhh lecker

  • My german mother would make those pancakes for us when I was a child and we would sprinkle with them with sugar and freshly squeezed lemon juice. Never tried them with Nutella but that wasnt the thing back in the 60s. Thank you for this video! It brought back so many memories ❤ Subscribed!

  • That whisk is like the one our builder uses for mixing plaster. I use just a fork, leftover spuds with fresh grated ones, leftover parsnips and leeks sometimes, grated Cheddar, a little flour and egg to mix. Love yours, just the right size. Thanks.

  • My mutter ist von Ulm und meiner vater war von Ludinghausen. This video brought back some many memory's, that I'm going grocery shopping to make potatoes pancakes. Plus the egg pancakes, but my mom put in sliced apples in the egg pancakes and served in with cinnamon sugar. And the potatoes pancakes were served on rye bread with unsalted butter with apple sauce.   • I have yet to meet anyone here in the US who makes a potato pancake right! This is exactly how my German Grandma taught me to make them & I have taught all of the girls in my life to as well. Nothing compares to these delicious treats! Every member of my family used to top them differently but I love them just as they are. My Daddy would love it if I took him a staple he grew up with, I believe that will be the next treat I take into the nursing home. Thank you for the idea!

    • Hey, not true. I'm American and I Love German foods! Have to admit I've never had this type of egg batter, but certainly had potato pancakes. They make great potato candy as well! I lived there for three years and miss it All. Trucks selling sausage where we went swimming. We'd never heard of Nutella before we went. The list is too long of favorite recipes from Germany! In fact, I made a German meatball and dumpling stew for a family reunion that everyone raved about for years. Sadly, we just don't have many people offering family style German food in the USA very often. Only those lucky few who've been spoiled and look for recipes to serve their families. Even here, there's no recipes. Repeated viewing still only gives an approximate idea of how to make a HUGE batch. It'd be expensive to experiment with such quantities, and you'd have to own a food stall with plenty of customers. I wish the recipe was given so I could make a few batches. Unfortunately, I can't visit Germany anytime soon.😢

  • My Mother had German in her background and she made both kinds of potato pancakes. One was grated potato always with applesauce and the ones from mashed potatoes with sour cream. She also made something that she put on a bun and put under the broiler for a couple of minutes. Ive been searching for that recipe for years. If any one knows please let me know. I love the way you flip the eggs. I can't even flip one egg. Wish i could come eat at yr stand.bcuz i would get both! I too eat sugar on an omlet just as my Mom. Now i know where that comes from. You must be very tired at nite. U work so hard! God bless.

    • I wish I had the recipe for those wonderful potato pancakes. My mother made those for us when we were little but sadly she passed away many years ago and I failed to get her recipe. I am now in my 80's and I wish my children could have the recipe. Thank you for sharing.

  • My German mom used to make both these pancakes when we were kids. I loved the egg pancakes but didn’t like the potato pancakes…but my husband loved them. My mom & husband loved talking food! 😂

  • In Austria we also have "Kartoffelpuffer". But we don't put "Apfelmus" on it, instead we flavor it with a lot of garlic. And "Eierpfannkuchen" is called "Palatschinke", invented from the Hungarians. Both meals are very popular in Austria.

    • Thank you for your very interesting comment.🙏🙌💚 The fact that the “Kartoffelpuffer” in Austria is eaten with a lot of garlic was completely new to us. Will try it out soon. Is there garlic in the "Kartoffelpuffer" or is there a herb quark or yogurt sauce that contains it?

    • @@moodifoodiberlin We flavor the Kartoffelpuffer with garlic, and we don't contain a herb quark oder yogurt sauce. It's qalso very common to put bacon also into the dough - and we eat it with green salad. So the Austrians prefer the spicy variation 🙂

    • @@moodifoodiberlin Such a nonsense with the garlic. No, we eat Kartoffelpuffer in Austria also with either applesauce or the quark sauce with chives. What he means is most likely something that came from Hungary, called Langos. Deep fried bread 'painted' on both sides with garlic sauce. Something for the 'hard' ones who don't socialize, LOL (joke), but it is very good. I grew up and lived in Austria for over 40 years until the late 1990s, with an Austrian father and grandparents, and a Hungarian mother and grandparents. I've got the best of both worlds, since both of my parents were passionate and excellent cooks, who could cook incredible and tasty meals with the most simple ingredients. And my 'cooking bug' got me already when I was a teenager. Cooking is for me like for other people yoga, haha. Cooking and eating (:

    • I was born in the 1970s and since then the Kartoffelpuffer, which you can buy in the streets or sometimes as a side dish in restaurants are served without anything or, as mentioned above with garlic. Never, really never with applesauce. The only thing you will somtimes get with applesauce is Kaiserschmarrn! (a thicker version of the Eierkuchen)

    • @@Choppini Well, I''m from Vienna, here you will never ever get Kartoffelpuffer with apple-sauce or quark sauce. Maybe it's common in other parts of Austria, but not in Vienna. And Langos is also very popular in Vienna, it's a typical snack if you visit the "Wiener Wurstelprater", the big amusement park in Vienna.
