Qatayef Ramadan Recipe 🥟😋
✅ Ingredients as added
✅ Towing syrup
3 cups of sugar
1½ cups of water
½ lemon juice
A splash of vanilla
✅ To make Qatayef
2 cups flour
½ cup semolina
2 tablespoons sugar
2 tablespoons powdered milk
¼ teaspoon salt
½ teaspoon baking powder
1 teaspoon yeast
3 cups of water
¼ teaspoon sodium bicarbonate
✅ Preparing the cream filling
1½ cup milk
1 tablespoon flour
2 tablespoons starch
2 tablespoons sugar
1 cube of butter
2 tablespoons cream
✅ Preparing the nut filling
¼ cup coarsely ground walnuts
¼ cup coarsely ground peanuts
¼ cup raisins
1 teaspoon ground cinnamon
1 tablespoon orange blossom water
✅ Other ingredients
Pistachio
Diced cheese
🌷 How to make crispy and light Qatayef 🌷
💠 To make the syrup:
1. In a deep saucepan, put 3 cups of sugar and a cup and a half of water. Place them on medium heat without stirring and wait until they boil.
2. When the mixture boils, add the juice of half a lemon and a pinch of vanilla. Leave the syrup on low heat for 10 minutes, then remove it from the heat.
3. Allow the syrup to cool completely, then put it in the refrigerator for later use.
💠 To make the dough:
1. In a bowl, mix 2 cups of flour, half a cup of semolina, 2 tablespoons of sugar, 2 tablespoons of powdered milk, a quarter teaspoon of salt, half a teaspoon of baking powder, and a teaspoon of yeast.
2. Stir the ingredients well until mixed.
3. Add 3 cups of water and mix with the dry ingredients.
4. Gradually add the third cup of water and continue stirring for 4 minutes until all clumps disappear.
5. Add a quarter teaspoon of sodium bicarbonate and mix well.
6. Filter the dough to get rid of any lumps that may be present.
7. The dough will have a liquid consistency. Place it in the refrigerator for half an hour.
💠 To make the cream filling:
1. In a bowl, mix a cup and a half of milk, a tablespoon of flour, 2 tablespoons of starch, and 2 tablespoons of sugar.
2. Stir the ingredients well until mixed.
3. Place the pot on medium heat and continue stirring until the mixture becomes thick and begins to boil.
4. Add one cube of butter and continue stirring until the butter melts completely.
5. Transfer the filling to a bowl and cover with plastic wrap to prevent a crust from forming on the surface.
6. Allow the filling to cool completely, then put it in the refrigerator for later use.
💠 To make the nut filling:
1. In a bowl, mix ¼ cup coarsely ground walnuts, ¼ cup coarsely ground peanuts, ¼ cup raisins, 1 teaspoon ground cinnamon, and 1 tablespoon orange blossom water. Mix them well.
💠 To make Qatayef:
1. Heat a frying pan over medium heat.
2. Place an amount of dough with a spoon into the heated pan.
3. Wait until the qatayef turns golden on the bottom, then flip it over to level on the other side.
4. Repeat the process until all the qatayef are cooked.
5. Place the finished qatayef in the cold syrup.
6. Complete the rest of the quantity in the same way.
7. Before serving, sprinkle the qatayef with chopped pistachios.
🔰 Thus, the crispy and light Qatayef is ready to be served. You can eat it hot or cold as desired. Of course, you can use other fillings, such as cheese instead of cream filling or pistachio filling, according to personal preference.
