On today’s episode I wanted to share my tips for a wonderful Mother’s Day Breakfast.
It is Mother’s Day here in the UK next week. Even if it is not where you are, these recipes are perfect for a sweet and satisfying breakfast.
For the Muffins:
150g muesli mix
50g light brown soft sugar
160g plain flour
1 tsp baking powder
250ml almond milk
1 apple , peeled and grated
2 tbsp coconut oil
3 tbsp almond butter
4 tbsp demerara sugar
For the Smoothie:
Berries of your choice
2 ripe bananas
300ml apple juice

I knew of someone who decided to become a Dr in this 40's. Imagine that task, but like you said, if you want it bad enough your dreams become a reality.
I adore the fact that there isn't a plastic bowl or a mundane serving dish to be found ANYwhere in your life. Even the ingredients for your recipes are in crystal glasses or china. And such loving touches to everything, whether it's tea for yourself or events with friends and family. Just brilliant. Thanks!
Wow, I hadn't noticed the lack of plastic before. He really does pay attention to the smallest of details. What a fine example to emulate 😍 I'm definitely rethinking a few things in my own space.

Lovely video Nicholas! As a nurse who retired at 28 to raise my family, I truly appreciate how proud you are of your Mother - raising a family and then going to nursing school at age 50. Your tribute to your Mum is exquisite. My mother passed away 5 weeks ago, so this will be my first Mother’s Day without her. I celebrate her everyday, but, will honor my love for her this Mother’s Day💓

Although you cannot hear her voice or see her smile no more, your mother walks beside you still just as she did before. She listens to your stories and she wipes away your tears; she wraps her arms around you and she understands your fears. It's just she isn't visible to see with human eye, but talk to her in silence and her spirit will reply. You'll feel the love she has for you you'll hear her in your heart; she's left her human body but your souls will never part.
Congratulations Nicolas on having such a great mother. Every time you kiss or hug or kiss anyone say to yourself “i am hugging a mortal” and it will make it even more special

Nicolas, what a beautiful video and tribute to your exceptional mother. It's heartwarming to see the respect you have for your family. Your mother, working so hard alongside your father, while keeping a home is really something to celebrate. It is obvious from the photos and warm memories of childhood Mother's Days that you are an extremely close family. I'm proud of your mother for her accomplishments and now doing one of the most important jobs in caring for those who cannot care for themselves while bringing comfort to the families with whom she comes in contact. Ahh, well done to your mum my friend, we have some things in common. I left school at 16, then at 47 went to university and gained my BA honours degree and my Master's degree. I am now a Lecturer in the criminal justice faculty. Another lovely upload Nicolas, thank you xxx

Lost my mummy at 92 five years ago, she had suffered sooo much with dementia but still remembered me when I visited everyday!!! Nicholas, I just re-watched this again and it brought tears to my eyes remembering my late mother. And then when you mentioned your mum went back to school to study nursing and is now a neo-natal nurse, it truly moved me. I had a beautiful mom and also had very high-risk pregnancies, which thankfully my children were in the best of care. God Bless you and your family. Thank you and we too in America loved your Queen. Hello Nicholas. I couldn’t believe the story about your mom. How she left school at sixteen and then at 50 went into nursing school. I too did the same thing. I became a nurse at the age of 50 also.
