The large-scale production of Parmesan cheese, also known as Parmigiano-Reggiano, epitomizes the harmonious integration of tradition, precision, and innovation. Annually, approximately 137,000 metric tons of this iconic Italian cheese are meticulously crafted, constituting a substantial 18% of Italy's overall milk output. Automation serves as a cornerstone throughout various production stages, from the precise cutting and shaping of cheese to the efficient packaging and rigorous quality control. Automated cutting machines efficiently slice the large cheese wheels into diverse portions, meeting diverse market demands with ease. Similarly, specialized molding machines expertly shape the cheese into various formats, while automated packaging systems ensure the swift sealing and labeling of products. Advanced technologies such as vision systems and sensors vigilantly oversee the cheese's quality and integrity, ensuring unwavering consistency and safety standards. Nevertheless, amidst this technological advancement, traditional tools like the revered "spino" retain their significance, as they skillfully cut the curd into small granules, releasing whey and facilitating the cheese-making process. This harmonious blend of automation and tradition not only upholds the unparalleled quality and authenticity of Parmesan cheese but also underscores its enduring legacy in the culinary world.

  • How dare you call Parmigiano-Reggiano parmesan cheese. It is nothing like the latter and it is a shameful outrage that you would even say the two in the same sentence. You could catch an ass beating or worse in Italy for such a slip. KZhead, please take this video down immediately as it is hateful and egregious toward Italians and to Parmigiano-Reggiano lovers as a whole.
