  • I just watched another baker making a christmas cake and her pots were very old and her oven with very dirty and her counters were cluttered with dishes, dirty and clean. It was a turn off. I didn't realize how much that affected me. I appreciate how nice your kitchen is, even in the throws of heavy baking. I like that you do a reset to power thru and your ovens are clean and pans beautiful. Thank you for that.

  • Becky, if you flip the grater over when zesting citrus, you'll be able to see where you're zesting and avoid the white pith. You'll notice that the grater is constructed to be used this way; it holds the zest within the sides so it doesn't spill out. ~ Lisa

I planned meals ahead of time and then spent one whole weekend day cooking...but I luved it!!! I wanted to tell u I learned several things tonight in this video!!! The crinkled parchment paper, the cookie sheet under the cutting board to keep the whole cranberries from getting all over the floor, the making a circle of the cut cranberries to contain the whole cranberries while u chopped them up and of coarse all of your cranberry recipes!!!     • I actually miss seeing his little head and hearing his gurgles. Because Becky shared she was pregnant and so many people bought presents for him they kind of thought they might of caught glimpses of him wearing their outfits or snuggled up in their blankets they bought him etc, it’s kind of sad we don’t see him, yeh we might not know him but because we all watch becky and just feel close to her etc it does feel like we know him, I can’t wait till he is old enough to jump in front of the camera and want to say hi to is all, not in a creepy way what so ever, but so we can see what a cute little boy he has grown into, and to see him helping mummy in the garden picking things, will be so cute.

  • Becky, if you reverse the way you are holding your grater, and put the grater on top of the orange, you can pull it across the orange and see exactly what you are grating instead of having to stop and look. I learned this from Chef Jean Pierre who had a restaurant in South FL for years and then a cooking school there. Retired after 50 years in the business and moved to KZhead. Thank you for your content. I’ve learned so much and thought I’d return the favor. Happy Holidays.

    • Apparently people who have always done it with the fruit on top find it really hard to switch to the grater on the top but I promise it is worth learning to do it "backwards". You can see so much better what is zest and what is pith before it is too late and your scones are full of bitterness.

  • I saw the oopsie with the bread pan and parchment paper. I used to do that all the time but I watched B. Dylan Hollis and he uses wood clothes pins to pin the parchment paper up on the sides. I thought it was a great idea so I'm passing it on

  • Everyone, when Becky says to make sure not to overwork the dough for your shortbread cookies, she's SO RIGHT!! I made my regular plain shortbread cookies this year, didn't pay that much attention, and seriously overworked the dough. The cookies were super delicious, but SO tough. Almost like a crispy cookie texture and not a melt in your mouth texture. So listen to her - she has fantastic information for everything!

  • Oh gosh, becky! There's a much easier way to use that microplane! Turn the microplane upside down -- so the teeth are facing the ground -- and hold the fruit still while you rub the teeth against the skin of the orange. This will allow you to "see" what you have already zested so you don't get any of the pith and you will have all the zest accumulate in the little well of the zester. You can then flip the zester over your bowl -- perform a few taps -- and voila! You have zested your orange.

  • I absolutely LOVE your style! You leave in all the mistakes and do not apologize for any of them! The before and after style of doing a restart was impressive! I got a bag of cranberries from the food bank and made cranberry jam out of it a few weeks ago. Over half of it is GONE because we love it so much.

  • Everything looks amazing. Tip for you. Hold your zester on top of the orange/lemon/lime. Then you can see where you've been and where you're going. The way they are designed, you will have plenty of room for the zest of even the largest orange. :-) Hope that helps. Thanks for sharing your delicious recipes. You can use binder clips to hold your parchment paper in place..

  • Shortbread is my favorite cookie to make! If you find a really good base, you can use it to make several different kinds. I made cranberry white chocolate, toffee, and rosemary lemon zest shortbread for my cookie boxes this year!

  • If you mis your fruit into the flour before adding to the batter it helps the fruit stay spread out in the finished cake instead of floating to the top or sinking to the bottom, depending on how heavy the fruit is

And I think having that huge window in your kitchen is wonderful because it just feels cozy inside and beautiful outside when you can stand in the kitchen and smell those wonderful smells coming from your oven and it just seems like the holidays that way. It’s actually relaxing to me to be in the kitchen with those wonderful smells and be able to look out at the beauty.

  • Hi Becky - I use a clothespin or chip clip to clip down the parchment paper to the sides of my pan while I'm pouring. It's always so difficult not to get that darn paper in the mix. Enjoy your channel so much!

  • When I am cutting cranberries I use a pastry dough cutter and a bowl. Just keeps them in one place and you can see how finely chopped they are getting.

  • 33:53 An off set spatula works wonders for spreading frosting onto a cake or bars that are lower in a pan than the top of the sides of the pan.

  • A little tip for you. Turn your zester over and hold the fruit underneath. The zest will fill the channel on top and you can see where you are on the fruit without picking it up to look.

  • Just a helpful tip I like to use.. if you are doing a crumbling type of dough… I like to put all ingredients into a ziplock bag and mix and combine it in there… then you just put the bag into the refrigerator to cool 😊

  • I started using my microplane on top of my citrus rather yah the opposite and it was a game changer. You can zest & turn the fruit while also seeing where to move the zester and it cuts down on time. The you can turn the zester over and tap into the bowl to release all the zest.

  • I use metal clips, small ones you get in office section of Walmart, one on each edge to hold the parchment paper down. Makes it easier to fill pans.

  • Becky, I make cranberry orange shortbread cookies every Christmas season. I make a double batch roll it into logs for slicing. I freeze one log for later in the season, and bake the first batch after cooling in the refrigerator. They are so good and one of my favorites.

  • For any round things you need to slice in half, yu can put them between two plates or bowls etc (or lids from those classic cup shaped food prep containers) to cut them in half easily!!

  • Suggestion on washing cranberries - fill a bowl or sink with water the good ones will float on top then scoop them out. Yummy recipes thank you for sharing.

  • I make that same cranberry orange bread using your same brand of loaf pans and I've never lined them with paper. I just spray them lightly and they always pop out with no problem. Keep up the good job of entertaining all your friends!

  • Maybe the Rachael Ray hack for cherry or grape tomatoes would work for cutting the cranberries. Put in between two lids, run knive through(you can always check her show youtube to see the hack).
