  • You need to cook the sugar a bit more, until is dark brown. Them is not so sweet and it gets a slight bitterness. You can add a few drops of lemon to the caramel to prevent it from crystallising fast

  • For those who are curious, this is a brazilian recipe called "bala baiana", which means "bahian candy" (Bahia is the name of a brazilian state, and baiana is the nomenclature for citizen of said state). Also, good news! Just the sweet with no caramel on top is in itself another brazilian recipe, it's called "beijinho", which means "little kiss". Indeed, you seem to have added waaay too much coconut haha, but cooking it's all about learning with practice! Really glad you enjoyed it

  • That's bala baiana, from Brazil. It comes from the state of Bahia and the recipe already existed before there was condensed milk, it was made with eggs, coconut, coconut milk and sugar. Then they replaced it with condensed milk. And if you want tips to make it better: make the filling without the coconut first and stir until it no longer sticks to the pan, then add grated and dehydrated coconut while the dough is still hot. This will make the filling thicker and hold its shape better. The syrup is better if you make it with pure sugar and let it melt while stirring, even letting it burn slightly, this way it will become thicker and slightly bitter,this is why the layers are thicker and more perfect and the taste is less sweet. Also an interesting fact is that only the filling we call beijinhos, which means little kisses.

    • Stirring pure sugar while melting usually makes it crystalize, it's better to add just a tiny drop of water/lemon juice and not stir it at all, just tilt the pan in circles

    • @@NanaLove011I used to do the wet caramel method like she did in the video and it takes way too long now I do dry caramel and it’s faster it clumps but you just have to stir and it will all melt together

  • The caramel was not caramelized enough, it was more of a melted sugar. Caramel is golden brown, not yellow (not ready yet) or not dark brown (then it's burnt). Melted sugar tastes different than caramel. But otherwise your candies looked nice 😊. And as long as you liked the taste, that's all that matters 😊
