This delicious CHICKEN and DUMPLINGS is the ultimate comfort food, it’s savory chicken in a delicious broth very much between a soup and a stew. It is topped with light and fluffy dumplings that will help thicken the broth into a rich gravy. There are many ways of making CHICKEN AND DUMPLINGS, and there are many shortcuts , but making it homemade from scratch will make it your own masterpiece and it will be full of flavor. This recipe is customizable, you can add or subtract any ingredient you like and make it just right for you and your family. I hope you give it a try.❤️

INGREDIENTS ___________________
1 1/2 lbs. cooked Chicken
1/2 medium/ large chopped onion
2 C. cubed carrots
2 celery ribs (slices)
2 large garlic cloves (minced)
4 Tbsp butter (for roux)
7 Tbsp All purpose flour
6 C. Chicken broth (low sodium)
1 1/2 C. Frozen peas
2 Bay Leaves
1/2 tsp dries thyme leaves
1/2 tsp crushed Rosemary
Pepper as needed
Salt as needed
1 1/2 Tbsp BETTER THAN BOUILLON Chicken base
3 Tbsp butter (to saute vegetables)
DUMPLING DOUGH____________
1 C. All purpose flour
1/2 tsp rubbed Sage
1/2 tsp salt
1 3/4 tsp Baking powder
Pepper as needed (optional )
1/2 C. Plus 1 Tbsp whole milk
I BOILED MY CHICKEN WITH 1 CELERY RIB, 1/4 SMALL ONION, 1/4 tsp SALT AND COVERED CHICKEN WITH WATER (maintain covered) . I USED 6 CUPS BROTH. I BOILED IT FOR 50 MINUTES (make sure you check chicken and make sure your your chicken is cooked very well).

  • When I was a little girl back in the 80s I had a grandma figure named Grandma Sue. She wasn't my blood grandmother but she chose to be. Oftentimes when I ran over to her apartment to spend time with her she would make, "Chicken and dumpkins," as my little child self would pronounce it. She passed away when I was 7 years old. I've missed her and chased the dragon that was her wonderful chicken and dumplings ever since. Nothing was the same. She was a scratch cook 80% of the time. All I could remember was a Bisquick box on the counter. The dragon has been caught. And Grandma's little Dodo is happily eating the closest thing, if not the real deal, of Grandma Sue's recipe. Thank you. It only took nearly 30 years, 😊 but finally.

  • LOVE, LOVE, LOVE, Chicken and Dumplings, my Mom used to make 2 batches of Dumplings, one batch in the pot with the chicken and a second pot steamed in Chicken Stock or bullion, there was no difference in taste or texture, but now everybody could have second or third servings with Dumplings, you can NEVER have too many Dumplings.

  • This is the way my mom made chicken and dumplings. You KNOW you're getting a dumpling! I've seen so many recipes using thin strips of dough that look like short noodles and call it chicken and dumplings. My mom would drop big spoonfuls of dumplings on top of the simmering chicken like you did. Comfort food at its best!

  • Hi Rachel, thank you for your videos and the love you put in all your creations. I saw this yesterday and made it today on a cool-45F, sunny fall day in Quebec. It is just delicious and my 1st shot at making dumplings. Awesome. I added 8-10 threads of lemon zest to my 2nd bowl, and it was spectacular also. Thank you so very much for sharing.   • I haven't had good chicken and dumplings since before my mother passed, 24 years ago. Her's were incredible. She made them just the same way you did, including real dumplings too. I really miss her and her cooking. That was one of her recipes that I don't have, most of them I make myself. I am going to make this one, I have a roaster / fryer in the freezer. Thank you.

  • Thank you Rachel for the recipe. My Mom and Grandmother made chicken and dumplings too, almost the same way. They did not brown the roux and I believe that that is the key to the thickening in the recipe. Also, sometimes, but not often, my Mom and Grandmother both used biscuits, cut into 4 pieces and placed into the simmering broth. I guess if you are trying to get food on the table fast, it will work, but homemade dumplings are better. Yours look so good and with the addition of sage to them, they will be out of site! Thanks again Rachel. (I make them for my husband and I using soy curls, and veggie broth. So, the same process can be done without the meat, for a meatless meal. Not the same, but it works.) ❤

I am 76 years old and I can't believe you're actually making old fashioned dumplings instead of those flat ones that some people call dumplings. This is absolutely a wonderful recipe!   • My family is from Oklahoma, back in the dustbowl period. They needed hardy sustainable food to survive. They used lits of fats, bacon, butter and as much meat as they could raise, mistly chicken. Their chicken and dumplings were made with bisquick, butter. Seasoning and chicken. The bisquick was prepared the way you'd make bisquits...each biscuit would be cut into 4's. They'd be placed into the chicken broth and later mire busquuck would be added to thicken the broth into a gravy. Authentic, Oklahoma dust bowl period chicken and dumplings were not like soup. They were a thick, creamy, heearty gravy with large bisquick balls and tender chicken pieces. An essential high calorie meal made inexpensively during a very difficult time. Your recipe is wonderful as well. Just want you to kniwvthebtrue origin of chicken and dumplings. Omgeese, I grew up eating this very lively dish...And yeah, what a history it has. Truly life saving for many that traveled "The Grapes of Wrath" on covered wagons during the dustbowl period, as did my father, grandparents and cousins. Thankfully, I'm still here to tell the story...Thanks for your version of chicken & dumplings. Truly looks yummy!!!! Love your recipe and will definitely try it. Take care if your dear self.

  • I just stumbled on this channel. I used to cook for a living so I am sensitive to watching KZhead demonstrations can be either enlightening or pure torture! What I've seen from this person so far is a solid foundation of kitchen knowledge. There's nothing worse than tuning in to a video and hearing the presenter say, "this is my first time making this!" Clearly, this lady has made a study of culinary art and technique. Here is a fine example of how to make reference chicken/dumplings. 100% spot on instructions, no cutsey "look at me" nonsense, just straight ahead clear, concise, accurate instruction on how to build this iconic dish. Impressive Rachel. I would have enjoyed working with you.

  • My first day back on here and of I'm drooling at what is one of my all time favorite comfort dishes. Oh my dear Rachel yours indeed is the perfect recipe. What I learned from this is adding rubbed sage to the dumplings which I've never thought of doing. Definitely now inspired to make this dish both with chicken and soy chicken as I've turned Johnny into a huge chicken and dumpling fan as well.   • My wife’s Yankee grandfather made chicken and dumplings like that (spoon dumplings, veggies, etc.), so I used to rib him about it really being a loose chicken pot pie. I grew up on rolled dumplings and chicken stewed with salt, pepper, and a tiny pinch of sage. Poppa JIm was a great cook though, and whatever you call what he made , it was deeelicious. This recipe reminds me of him.

  • I love chicken and dumplings. I've never been able to make the dumplings without them having the texture of a lump of clay. I'm going to try these. I've always stirred the dumplings when I put them in, I'll put them in, cover for 15 min this time. Thank you Rachel.

  • My old grandma (and my mom) made the best chicken & dumplings, but the dumplings were rolled out and cut into strip pieces and laid to cook/steam across whole simmering chicken pieces in the pot. Also, no carrots or peas. Def going to try yours, Rachel. Like the spices you used in the pot and in dumplings, too and the additional veggies. One secret my grandma had was to use all or part chicken broth instead of milk in the dumplings. It really ramps up the chicken flavor from the inside.

  • Chicken and dumplings is my all time favorite comfort food. However the dumplings I raised on are more of a noodle. I remember my mom rolling out the dough, slicing it into strips and putting them in the broth

    • Yeah that's little old school, my Dad grew up around St. Louis in the '40's and he had those and they were always chewy, then decades later he had Southern Dumplings like Rachel's, and he preferred the light and fluffy ones.

  • My old boyfriends' mom taught me the Czechoslovakian way of making these. They are the size of a small football and put in a sour cream gravy and the bone is left in the chicken. I think I will make a combo of your recipe and Mikalina Scavone's recipe(she is Sicilian but her hubby was Czech). I will make it your way but put sour cream in the boiling sauce with the dumplings.
