I was born in 1945 and throughout the 50s my mother always made Mac & Cheese with Velveeta. I loved it. Cook the macaroni, make a roux and cut Velveeta into small cubes then mix it into the roux and stir until melted, add macaroni. Pour into buttered casserole dish, top with crushed saltines and melted butter. Bake 350-degrees for 15-20 minutes (until lightly browned and bubbly. No cheddar, no onions. The roux was made with butter, AP flour, S&P. I still love her recipe, though I sometimes add peas or broccoli.

Growing up in the 1950's, velveeta was the only cheese my family could afford. We sliced it for sandwiches using a little, safe, hand held utensil. Always had velveeta on hand.
The amazing hand held cheese slicer that was just the right size and made the perfect slice. The ones nowadays are big, bulky and inconvenient to use. So glad I scooped up my mom’s original one from way back when, before our family home was sold with whatever contents were left behind❣️
I miss our slicer! It was great.
Velvetta was all we could afford in the 70s.
We had one of those little slicers too. I remember it well! But it’s not cheap anymore! Right now, it’s just a bit under $9 for a 2 lb block.
My Mother always used Velveeta for grilled cheese sandwiches. That's many childhood lunches with tomato soup. Ahhh, comfort food. 😊❤

My mac and cheese uses half velveeta and half regular cheese. The cheese snobs don't know this in my family, but my dish of mac is almost always the one that is cleared out at gatherings. Some secrets are best left unsaid and much appreciated.

I’m 72 and cannot remember a time Ed didn’t have Velveeta in the house. I still use it on occasion especially in my potato soup recipe.

Yeppers, it makes terrific potato cheese soup and broccoli cheese soup, too! (I'm 60 & grew up with Velveeta. It's amazingly versatile.)
I use Velvetta in my family favorite Broccoli Casserole. I have carried this to any family meal for 50 years. One dinner (many decades ago) I decided to make something different. When I got to the dinner, my nieces were so disappointed that I hadn't brought Broccoli Casserole, I came back home & made it to take back to the dinner. I wrote the recipe on cards & mailed them to each of my 4 nieces. The 1st niece to receive her recipe card called her sisters to say she was the proud owner of my recipe. The other 3 got their copies in the mail shortly after. My daughter also makes for potluck & holiday meals. I will submit my recipe per your link. I really enjoy your family, recipes & Miss Gracie. OHMYGOSH!! We used it all the time in the 70’s in the dorm with Rotel, sausage, and Velveeta!! Best dip ever!!

I remember when I was growing up, probably like six or seven years old we had Velveeta cheese all the time that’s the only thing we have in the house, but it came with a funny, little bored, and I wire thing that you cut cheese slices with, it was so cool and then later my mom got from like the filler brush, guy or something who came door to door as a freebie. This little wire thing with a roller that used to roll down the cheese and it made a perfect 8th inch slice. That’s a long time ago. I am 62 years old.

I still have mine and use it regularly. It did not come from the Fuller Brush man but we had other things from him. Boy, door to door salesmen, I'm really dating myself. 😅
My dad (I'm 65) called Velveeta "cheese butts," claiming it was the ends of all of the other cheeses. 😆 And, yes, it was around in the 50"s and 60's when my siblings and I were growing up. We saved the boxes to use as coffins for all of the small pets that we often had funerals for!

I grew up eating Velveeta mac and cheese. Basically cooked buttered shell pasta with slices of velveeta melted over top in a skillet. YUMMY!!!!!!

Funny - my Dad used Velveeta as FISH BAIT! When he would go fishing, he would put a little velveeta on the hook and boy, the fish loved it! Growing up, I always saw this as fish bait and when I saw someone cook with it I almost threw up! I like it now, it is good stuff! Oh yes, I would definitely love and appreciate more Velveeta recipes❣️ Growing up, my mom never bought individually sliced and wrapped cheese (like Kraft Singles). We did, however, always have a box of Velveeta cheese in the fridge. That’s what we used for our grilled cheese sandwiches (before such a thing as velveeta slices). One of my favorite sides made with the velveeta was cheesy scalloped potatoes. Omgoodness, the nostalgia…. I almost can’t ❤. My mom only made said cheesy scalloped potatoes as a side with meatloaf. Now to me, that’s comfort food 101. Thank you for this great video, with such amazing sounding recipes (I’ve already printed all 3 of them!!), but I also can’t say thanks enough for this stroll down memory lane ❤. And the reminder of the cheesy scalloped potatoes and meatloaf dinner that I’d basically forgotten about. Looks like I’ll be doing some amazing recipes with velveeta cheese. I can’t wait😊. Girl Scout Gumbo 2 lb. hamburger 2 cans vegetable soup 1/2 lb. Velveeta, cut into pieces 1 bag Fritos Salt and pepper, to taste Fry hamburger and drain grease. Then add soup and cheese. Cook in large pot until hot and cheese is melted. Serve over crushed corn chips.
Sounds delicious might give it a try without the salt has plenty with the cheese and soups just add some garlic powder with the pepper

Around midnight and you want nachos... chunk of velveta in a pyrex custard cup, water most of the way up the sides of the cheese, three or more drops of hot sauce, nuke and mush with a fork, and take it back to the tv with a bag of chips.

More velveeta recipes. I have used Velveeta my whole life. It doesnt break when making sauces. Think cheese sauce and substitute velveeta and a little milk or rotel --- no need for a roux. It is the secret to my husband's famous grilled cheese sandwiches. I like to also used velveeta cheese slices. Love your show and your family

My sister and I always loved making Velveeta grilled cheese sandwiches with a bowl of soup. This was back in the 60's. Still remains as a staple in our kitchen.
Many years ago, I won a little contest at the local Friend of the Library gathering. It was for the most unusual surprise ingredient. It was made with Velveeta and it was Chocolate Fudge. I don't even remember now where the recipe came from, but it did not taste like cheese. It was just smooth and rich and chocolatey. Love all 3 of these and really want to try to chili cheese spaghetti.
I remember years ago when Paula Dean was first on food Network. She made a Velveeta chocolate fudge. I've never tried it but I can't imagine it being bad haha

I make a spicy dip with one cooked diced jalapeno, and one cooked diced onion. Add in 1 can of evaporated milk along w/ a blocked of cubed velveeta. Let it melt, and serve w/ corn chip scoops. It is good served cold too. We take this on camping trips. So good! But it's spicy. :)

I make Rotel dip with 1 lb mexixan and 1lb regular Velveeta. I add to it 1 can Rotel mexican and 1 can regular Rotel. Everyone at my work loves this.😊

Okay, well, I'm 73 and I had never heard of Velveeta cheese growing up. The fist time I had it, was when I was in my 20's. AND, that was the last time. I prefer real cheese. There are so many other ones that "are to die for"!

I always add some Velveeta to the Hamburger Helper recipes. And the cowboy queso is habit forming!
Your taco spaghetti casserole sounds delicious. I just made a one pot taco spaghetti that was wonderful. Brown 1 pound ground beef with a small onion. Mix in 1 package taco seasoning. When beef cooked add 3 cups of water. Bring to boil and add spaghetti noodles. Once noodles cooked add 4-6 oz velveeta. We all decided it would be good to add corn and/or serve with cornbread.

it is great in Mac and cheese. We use elbow macaroni's with a can of cream of chicken soup and how ever much Velvetta you want. . Reminds me of my Grandma.

We always have Veletta on hand. The dip is one of our favorites. Sometimes we just mix the Velvetta and Rotel when we just want something quick for snacking on to watch tv. I suggest adding chopped up jalapeños to it. Great video as usual!

I have always used Velveeta cheese until I started shopping at ALDI 20 + years ago. If you have an ALDI store nearby their brand of cheese is exactly the same and truly tastes the same but is 4.00 cheaper. It makes great grilled cheese sandwiches as well as is delicious in casseroles. I make this dish (home made hamburger helper) and love it with a side of peas. Thanks for sharing these recipes. I love Velveeta! I'm going to try the spaghetti recipe! MORE VELVEETA DISHES, PLEASE! Little hint: microwave your lime or lemon for 10 to 15 sec to get more juice. Also rolling it firmly on the counter top or cutting board a couple times helps, too.
Mmmm, those look good 😋 I scrounged around the Internet and found a recipe for broccoli-cheese soup, with carrots and onions shredded in, Velveeta and cream cheese, chicken bouillon or broth, all cooked in a crockpot. I'm sure you can find it with Google. My husband doesn't care for it much, but the kids and I love it 😊 Happy eating!

I love velveeta in my dips. I make the sausage, rotel, and Velveeta dip. I will definitely try this. We used to eat a lot of this growing up and when I would make grilled cheese and different pastas, and Doritos chicken. We used to eat it when I was growing up and I ate it a lot until I learned how bad it is for you. So I scaled back.

The cowboy dip can easily be made in your slow cooker. brown the sausage on the stove add to slow cooker along with the other ingredients on low. stir occasionally switch to warm once all incorporated.
I split the amount of sharp cheddar and velvet when I make broccoli cheese soup! The velvet makes it so so good!

I use it to make macaroni and cheese with peas and chicken. My husband and daughter are gluten intolerant but love Mac and cheese so I needed a quick way to make it for them and Velveeta melts quicker than cheddar.
