  • As someone who preps lots of raw chicken with scissors, please buy kitchen scissors that come apart. The permanently affixed ones are harder to sanitize properly, especially if you're cutting raw meat with them. Detachable scissors allow you to clean the contact area more thoroughly.

  • Those regular metal serving drainy spoons are such an underrated item. I have 3 or 4 of them and I use them all the time. I don't see them in many kitchens though. Most everybody uses the big plastic drainy spoons. It's nice having smaller ones.

  • Also make sure your silicone spatula is a solid continuous piece, the wood or metal handled ones have SO much bacteria and tend to break too

    • Wait why is there bacteria on those?

      @lucasblanc11@lucasblanc116 ай бұрын
    • @@lucasblanc11 sweetie there's bacteria on everything, but on the wood handled silicone spatula there's a place for bacteria to grow and flourish so it's less safe than all silicone

    • @@emilymulcahy Honey, there's plenty of supporting research detailing that, assuming your wooden utensil isn't cracked, split or broken, bacteria is only surface level. Assuming you know how to disinfect and sterilize your kitchen, which you should regardless of the material type you own, you will be fine with treated wooden boards and utensils. Also it's biodegradable when it's life ends.

      @nizlor@nizlor6 ай бұрын

  • I understand the obsession with delis in a professional kitchen setting but I really think more people should advocate for glassware for home cooks. Glass doesn’t get stained like plastic and absorb smell, is better for the environment and won’t leech into your food. Sure it could be slightly more of a hassle and prone to breaking. But the pros really outweigh the cons in a home setting IMO

I have bonsai scissors as well, micro plane is a must, silicon tipped chopsticks are amazing, fish spatulas are a goldsend, slightly cupped silicon spoons, I also bought some French silver spoons of a ton of sizes on eBay, I also have these like fish tongs from the 70s? Picture a thin slotted fish spat but there are two but with out the crossbars joining the slots, so a bunch of metal fingers. Metal bowls, deli containers, spider, pastry mats, stainless baking sheets, I’m also a sucker anything that’s cast iron or carbon or clay or stainless or copper 🤣 sorry I’m stoned boys.

  • If you're like 'this is still too fancy for me, i have 4 dollars and everything i own is in a backpack', I got you. 1 knife (ideally this would have something to sharpen it on, a paring knife or small chef's knife is just fine. i like a santoku. Something with a sheath of some kind please). 1 pair wooden chopsticks (sturdy, please, or replaceable). 1 spoon (sturdy plastic or metal). 1 small pot with lid (stainless steel if you can get it, a flat lid you can use in other ways is nice). Something to cook on (near infinite options depending on where you are). A strainer/colander/cheesecloth and a bowl/plate of some kind would also be nice, but it's not mandatory. Haven't done any polls, but when you meet enough homeless people, full time campers, uber rich minimalists, people who share a studio apartment with 5 people, broke people, etc, you find some common objects most of them have had forever. This set will let you cook hot meals, soak cold ones, make a hot beverage, peel most produce, gut/scale fish and pluck birds, whip cream or scramble eggs, pick out small objects without using your fingers, drain boiling water, steam anything, fry anything small enough to fit in your pan, make basic candies and desserts, throw together a sauce, salad, or soup, you name it. It is 100% technique and while there are some things that do require special equipment, by and large you really just need semi functional hands, non toxic materials and ingredients of any kind, a source of potable water, and the knowledge of how to handle what you have to make food. Or anything else, for that matter. Trial and error will serve you here as long as you don't majorly fuck up and poison or malnourish yourself, so try to avoid that. (Note: please do not try to live anywhere without things like a knife and clean water. You are not a survival expert and you will die horribly. Even in desperate moments you will thank yourself for thinking critically before throwing away any ability to access resources. Thanks, go have fun)
