We challenged chefs of three different skill levels - an amateur, a home cook, and a professional - to make a bowl of ramen. After each of them had presented their creation, we asked a food scientist to review their work. Which noodles are you diving into first?

    • An easy way to scale a fish without the scales flying everywhere is to fill a bowl with water and scale the fish with a fork or scaler in it.

    • @@judspizzy Kombu is dried kelp, used traditionally in making dashi or broth. It's tough, fishy and is used pretty much used exclusively for cooking. Nori, on the other hand, is roasted seaweed. It's light, crunchy, still fishy but with hints of salt and the roasting process. They're not only different plants, but taste different and serve different purposes. A minor slip up, sure. But context matters in this case, especially.

    • He has a restaurant in Brooklyn, NYC. It's called Yuji Ramen. Small little shop with only like 12 seats available. Absolutely crazy ramen. I've eaten a lot of great authentic Ramen growing up in Asia but this one was truly an experience. He serves a fish broth ramen there as well. Super interesting.

  • As someone who is training to be a chef, it is interesting to see the reactions as each person tastes their dish. The level 1 people are always like "Oh yeah, that turned out pretty good." The level 2 are always like "OMG this is so delicious!" and the level three chef's reactions are usually a lot calmer, and more down the lines of "Yes.... that is made correctly."

  • I loved every dish. Bianca was so adorable and made a simple meal with her own flavors using what she can. Lorenzo was having fun and has a bright personality, and his dish looked great. Yuji took time just crafting that dish and it shined so much culture. I love these videos.

    • Dry noodles are one of those foods that work very well. Freshly made noodles are slightly better but for most people that are not professional (or love making noodles), the difference in a pasta dish is in the sauce and toppings, not the noodles.

    • Making homemade ramen noodles, unless you want to develop it as a skill, is more trouble than it’s worth. It requires more advanced technique than other varieties of homemade pasta, and is very easy to get wrong. If you don’t have a lot of practice, your homemade noodles will probably be worse than what you could get at an Asian supermarket.

  • My recipe for instant noodles is a package of peruvian ajinomen instant beef noodles plus an egg, scalions, beef meat, nori, sesame oil, ginger, garlic and korean soy sauce, I usually have frozen handmade tofu gyozas as a side dish and it tastes like heaven at 3am when I'm in my finals, totally would recommend

To me, it's always important to make ramen from scratch, mainly because packaged ramen with flavour packets are so one dimensional, you're literally eating salty water with rehydrated noodles.   • I don’t like the editing on this episode. We kept jumping around from chef to chef too quickly so it was difficult to follow what each person was doing. That’s especially important when we have several different components. Also, Rose did not discuss the relative merits of the cookware. Sauce pot versus Instant Pot (how long was the pressure cooking?) and big stock pot (8 hours).

  • Level 0 chef -- me 1. Open two packets of instant noodles and boil in a pot of water 2. Add two eggs. 3. Pour the soup stock in near the end, stir a while. 4. Eat noodles straight from the pot with chopsticks.

  • Notice how even how they eat their ramen was in 3 levels. Level 1: eats with a fork. Level 2: eats with chopsticks. Level 3: eats with a special soup spoon, followed by the chopsticks.

    • Most of the time when you eat soup dishes in Japan or even in some Japanese restaurants in other countries, they usually give you a Renge spoon since some people like to start with the soup before eating the noodles. I like eating the noodles first though since it gets soggy the longer I let it soak in the soup.

  • How about a video called "4 Levels of Leftovers" where three people are given the exact same kind of leftovers and have to use all of them, and then you can see what each and every one makes? I think that could be an exciting "special" for this series. :) Anyway, I'm craving ramen now... guess I'll go make some later!
