Homemade Pizza Dough 🥵
2 1/4 cups (530 mL) warm water (100 degrees Fahrenheit)
1 Tbsp sugar (12g)
1 Tbsp Dry yeast (9g)
2 Tbsp olive oil (30mL)
1 Tbsp kosher salt (18g)
5 cups bread flour (600g)

a tip: if the water is around 60°c warm the dry yest will activate just give it some time

I have been making Adams pizza dough for months now.....and it's absolutely amazing!!!
If you ferment in the fridge for 2+ days you don't have to knead that long. Just 5 min is good. The long fermentation process does all the gluten work for you. Just make sure to do the window pane technique when about to do the last rise before baking.

Ive been making pizzas nearly all my life, worked as a pizza maker in a restaurant for almost 7 years and I stand by Adam's dough recipe. Honestly, throw all notions "authentic" and "tradition" and you will be surprised by what work with what in food. Was surprised by the amount of oil he used in his dough but, it came out great. I leave mine out at room temp for 30 mins and it's good to go! (1-2 is ideal though) ""

You can also freeze the dough... That is what I always do when I make my own home made Pizza. p.s. I always make pizza using fresh beer yeast, the taste is much better.

I made you’re recipe but I used the whole packet of yeast and 1cup of flour so it didn’t taste good and I was blaming it on the olive oil 😂 I need to get a cooking scale and measuring cups

With all due respect, no sugar, no warm water, no bread flour. I have a better recipe, this recipe is 72% hydration with biga and poolish Biga preferment: 400g of 00 flour or 0 flour, make sure it’s 12% protein or higher Dissolve 1g dry yeast into 200ml water Shake the flour and dump your liquid in, it should form ribbons or blobs of dough. Now the poolish 200g of the same type of 00 or 0 flour Dissolve 1g yeast into 200ml of water Now form a batter with the flour and water Ferment the biga for 16-24 hours at room temp while the poolish for 2 hours at room temp and 14-22 hours in the fridge Then mix the biga and poolish together while adding in 320g of ice cold water, this helps the gluten structure form Add in 30g of salt and 400g of 00 or 0 flour Knead the dough, it’s going to be sticky since it’s 72% hydration, but if it becomes unbearable, cover the dough for 10 minutes and rework the dough, do as many times as needed, the dough should appear smooth and have decent springiness If you wish to do a double fermentation, then double the amount of yeast and ferment the ball of dough for 2 hours at room temp and 16 hours in the fridge but even if you decide to do a direct fermentation, you would also have to do the steps cut the dough into 6 280g balls and PLEASE make the top as smooth as possible, like a balloon, then crimp the bottom and seal the air in Let the dough balls double in size (which takes 3 hours where I’m from but can take 4-5hrs) and then use the neopolitan clapping technique for stretching the dough, top it how you would like and bake it, I do 450’c on my ooni karu 16 with 400’c stone temp, results may vary.
