I'd like to introduce 'Gâteau Creusois,' a French pastry. This cake is a simple baked dessert from the Limousin region of France, but it boasts a rich aroma due to its generous use of roasted hazelnuts. The moist texture of the baked cake rivals that of any high-quality pastry. I had the pleasure of trying it at a cake shop in Paris and was pleasantly surprised by its deliciousness. I became so enamored with it that I looked up the recipe and made it repeatedly. I encourage you to give it a try.

◼18cm cake pan
130g hazelnuts
- Bake in the oven at 150°C for 15 minutes, cool and then grind to a powder in a food processor.
80g cake flour
150g melted unsalted butter
5 egg whites (150 g)
65g sugar
65g brown sugar
- Bake in an 18cm cake pan at 175℃ for 40-45 minutes.

  • i just made this and am impressed with it's elegant simplicity. i used a 9 inch spring form cake pan which lended a thinner cake, which suits me fine. it's not a sweet cake but i do like the crumb on it a lot. thank you for sharing such a beautiful cake recipe!

  • 早速作ってみました。予想を裏切らないナッツのシンプルなケーキで、先ほど温かいうちに食べてみたらしっとり美味しかったです。生地が(直径15cm型だと)少し余ったのでマフィン型で焼いたものが食べるのもお手軽だったので、今後はこっちでゆこうかなww いつも美味しいレシピをありがとうございます!

  • I like that. Simple being the operative word. The hazelnuts are a bit of a pain though! Would work with walnuts and pecans easily.

    • some companies package shelled hazelnuts, which i use, and then just roast them. i can imagine it would be a pain if you had to crack them all!

  • I can't find cake flour in any stores😢 There's probably in restaurant food stores. But where I live you need a license to get in. Can someone tell me how to make cake flour or should I just opt on ordering online.

  • So I had a go at this, and tbh, I found it a little underwhelming. So I made a hazelnut crème patisserie with the egg yolks and sandwiched it in the cake. Interesting history behind it too.

    • i liked the simplicity of it, with just a little icing sugar on top.. but your hazelnut creme sounds divine! i think i would try a raspberry coulis with it next time - just for something different

    • that would make it too heavy. any baked good with egg whites will make it fluffy!
