Gordon Ramsay Cooks Shrimp Scampi In Just 10 Minutes | Ramsay in 10

Gordon is out to prove that all you need to make a stunning dish is 10 Minutes and incredible ingredients. So on Ramsay in 10 he's challenging some of his favourite chefs to prove that he's right. This week Gordon's first guest is none other than...him! Watch as he cooks up a delicious Shrimp Scampi with capellini Pasta that you can easily make on any busy evening. Yields 1 serving
Ingredients
8-12 each 16/20 peeled, deveined shrimp
4 oz dry capellini / angelhair pasta
2 Tbsp Extra Virgin Olive oil
3 each garlic bulbs
1 each large shallot, small diced
2 tsp chili flakes
2 each lemons
¼ cup white wine
2 Tbsp capers
½ Cup cherry tomatoes, halved
½ Cup seafood stock
2 oz butter, cubed
1 parmesan cheese wedge
1 sprig basil, picked
TT Salt and Fresh Cracked Black Pepper
Method
Add water to a 4 quart sauce pot. Salt liberally, cover with a lid bring to a boil.
Heat a medium nonstick sauté pan on medium heat with one tablespoon of olive oil. When hot add the shallots, finely grate the garlic bulbs into the pan and sauté for 2 minutes to soften them. Deglaze the pan with the white wine and cook until it is almost evaporated from the pan. Add the seafood stock, chilli flakes, capers, cherry tomatoes and lemons (zested and juiced). When the sauce comes to a simmer, season the raw shrimp with salt and pepper and poach in the liquid for about 1 minute per side. Add the cubed butter to melt. Taste and season the sauce accordingly.
Meanwhile, when the pot of water begins to boil, add the pasta and use tongs or a fork to gradually push it into the seasoned water as it starts to soften. Boil the pasta, stirring occasionally so it doesn’t stick together, for about 3-5 minutes, or until al dente. Strain the pasta and quickly add it to the pan with the scampi sauce and cooked shrimp. Toss the pasta in the sauce to coat evenly. Finally, tear the fresh basil leaves and toss into the pasta before plating.
Plate the cooked pasta into a medium size bowl with some height. Garnish with a grating of parmesan cheese.

  • I like Gordon Ramsay. The spark of intense "for show" personality aside, he is a genuinely humble man and a remarkably gifted British chef! I love his inclusion of cook times (90s etc) and his animated and detailed narrative as the food cooks. THAT DISH LOOKS SO GOOD!!!

  • I am making this dish for the second time. My wife said it is her favorite dish of all the ones I make. We live in the mountains of North Georgia so obtaining shallots is fruitless. There are Amish farms which supply wonderful huge green onions so I substitute the white bulbs for shallots and it works pretty well. Cheers!

    • if you pay close attention for caramelizing the onions it was: a touch of olive oil in the pan, add onions, a drizzle of olive oil, salt & pepper, more olive oil . It's just gets me every time xD , for the pasta too, he added oil 4 times hahaha

  • made this just last night after watching this video, absolutely brilliant. Best scampi I have ever made. My husband wouldn't go for the quick pasta cook, so it took slightly longer than 10 minutes. I had made a loaf of artisan bread early in the day and it was a divine meal. Keep it up Gordon, I may not enjoy your profane laced kitchen shows, but I like your style of cooking and recipes.

  • I just made this recipe. I used regular onion instead of shallots, regular tomatoes, dried basil and no capers. Turned out really good. Lemon flavor tastes incredible with cheese, shrimp and all other vegetables. Deffo recommend, i didn't follow the recipe precisely, just used the stuff i already had, and it still was delicious.

  • I learned from a not-so-renowned chef to never ever grease your boiled pasta with olive oil. The thing is pasta needs to be infused with the flavor and consistency of your sauce. If you'd grease it with oil, it won't be able to absorb it. Beautifully done with the scampi.

    • Gordon's cook time doesn't include taking the food out of the fridge and cupboard, retrieving the utensils and pans, or cleaning everything and putting it all away when finished. Actual time needed for a dish like this is easily 20 minutes when you factor in all of the "non-cooking" tasks.

    • Garlic and onion didn’t have the skin. Shrimp were already cleaned and skinned. Water was already boiling. And everything was on the counter ready to go. That’s probably 10-15 minutes of prep right there.

    • Just practice with a comfortable and proper chef knife. You’ll get good in no time. Speed is second, accuracy is first. Literally the first part of all culinary programs is learning how to properly use knives. It just takes time. But after the first week of school all of us were 100X better than when we came in. Before I learned how to properly make the traditional cuts of veggies, I completely quit prepping them before cooking. I just do it as I go.
