    • Harder squashes can be used as karela is very fibrous. Try out winter squashes and be mindful of how the taste changes compared to the bitterness of bitter gourd.

  • I found the kerala prep to be unusual and surprising ... first they peeled off the exterior (the most flavorful and nutritious part) and fed it to a cow. Then they chopped up the kerala whole (without removing the bitter pith and seeds) and then braised and fried it. Personally, I leave the dark green rind ON and instead discard the white pith and seeds.

    • Yes, but the Tamarind they cook with it is a sweet and tangy fruit that balances out the bitter from the bitter gourd, making this a tasty dish. Even the leaves from the tamarind plant are sweet. You will often see them using tamarind juice because the fruit is so sweet it can be overpowering. So, using the fruit with the bitter gourd is perfect to cut the bitter flavor.
