Vibrant Atmosphere at Xi'an Township Market: Bursting with Popcorn, a Place to Whet Your Appetite

In this episode, I visit a small town in the eastern part of Xi'an, China. The first rays of sunlight illuminate the town's market in the early morning. Absent are skyscrapers, replaced by a strong sense of rustic charm. Instead of modern high-end malls, there's a simple yet vibrant atmosphere.
On the streets of the market, vendors sell traditional Xi'an noodles and buckwheat noodles. With their large knives, they skillfully slice uniform noodles. Traditional popcorn makers blow whistles, infusing the market with energy. Many of them are elderly with over 20 years of popcorn-making experience.
In the central open area of the market, there's an open-air food section offering a variety of noodles that tempt the taste buds. Steaming pork buns, chewy beef soup, refreshing cold noodles, uniquely flavored buckwheat noodles, and savory leek pancakes make one eager to taste.
Here, you rarely see employers, yet there seems to be no unemployment. The people in the market are hardworking, optimistic, and kind-hearted. Everyone has skills to make a living, creating a good life with their own hands.

  • OK, I'm ready to move there! I can wait in line (16:00) for a steamer tray of pork buns for what? Three Yuan? Four? I love these markets, it's the perfect recreation for retired people I think. I would go there every day. I enjoy such videos, and much more where there is commentary, comparing prices and regional attitudes. When I look at these big markets, it looks like a holiday! It's always hard to believe it's just another day.

  • At 20:00 In the US, we can buy dry buckwheat noodles, usually a Japanese brand made in Korea! Jelly noodles, starch noodles, mung bean noodles you have to make yourself. I've never seen any of them in a restaurant, and of course there is nothing on the street like this at all. If I could live near this market I might be pretty content with life. I always say that! I do wonder if there are apartments near there. I have made jelly noodles myself, I even have that scraping tool... but I would like to be able to just go outside and find them!

    • Sí, el queso es muy escaso en China porque las condiciones naturales del país no permiten la cría masiva de vacas y ovejas, además, el clima chino no es adecuado para la fabricación, procesamiento y almacenamiento de queso. En los pocos supermercados chinos, hay una cantidad muy limitada de queso disponible, y la mayoría de este proviene de Europa, Estados Unidos y Australia. La gran mayoría de los chinos nunca han probado el queso.

    • 20:10 Ingredients: Pea starch, water (ratio of 1:6) 1. Pour 600 grams of water into a pot and bring to a boil over low heat. 2. Dilute 100 grams of pea starch with a small amount of water. 3. Pour the diluted pea starch into the pot while stirring continuously until no dry powder remains and the mixture becomes transparent. Turn off the heat. 4. Pour the mixture into a container and let it cool. 5. Drizzle some water on the cooled mixture and use a scraping tool to draw it into strips by circling around. 6. Place the strips into bowls, add various toppings, salt, chicken bouillon, monosodium glutamate, light soy sauce, vinegar, garlic water, homemade chili oil, and mustard oil for seasoning. Ready to serve.

    • 25:39 "popcorn" is just a general term. In China, the ingredients for making popcorn can vary. Apart from the most common corn, they can also include white rice, earthy-colored wheat, brown fava beans, and more.
