School Syrup Sponge CLASSIC BRITISH Dessert

Syrup sponge pudding is a classic British dessert, often remembered fondly as a staple of school dinners. It's a simple, comforting dish made with very basic ingredients. The pudding itself is a sponge cake, traditionally steamed, though it can also be baked. The key feature of this dessert is the golden syrup, a type of light treacle and a byproduct of refining sugar cane or beet into sugar. This sweet syrup has a unique flavor, making it a popular ingredient in British desserts.
The sponge is typically made with flour, sugar, eggs, and butter and sometimes flavored with a bit of lemon zest. The golden syrup is poured into the bottom of the baking dish, and the sponge batter is spooned on top. During cooking, the sponge rises, and the syrup infuses it from the bottom up, creating a moist, sweet, and slightly sticky texture.
Syrup sponge pudding is often served with custard, another quintessential element of British school dinners. This warm, sweet sponge combination with the cool, creamy custard is a classic comfort food, evoking nostalgia for many who grew up eating it in the UK.
The dish's popularity in schools was likely due to its simple ingredients, ease of preparation in large quantities, and its ability to provide a filling and energy-rich conclusion to a meal. Despite its simplicity, syrup sponge pudding is a delicious example of traditional British home cooking.

    • Yeah, the smell of the “food” in the school cafeterias here in the US made me dry heave as we walked in. They’ve been poisoning us since the 1980s here trying to make us sick. No butter in anything-only margarine which is toxic seed oil sludge. Then the “meat” was something mysterious every time. I’m glad my mom made our lunches, or I’d have never eaten anything at lunch.

I try to do the same, she gave me a great start teaching me to cook & bake. Love what you’re doing, so important to keep traditional recipes alive. When I left home at 20, moved nearer my grandparents in Gateshead. Once a week I went for dinner. The winter is when she made the leek & cheese pudding. I remember one particularly snowy day, got there after work in my wellies lol. Granda got me to sit by the fire & gave me a brandy & orange to warm me up 😊 Followed by the leek pud it gave me the strength to walk uphill all the way to my home. Lovely memories & your cooking brings them all back. So much of life revolves around food & what it means to us. Keep doing what you’re doing, take care

  • I never had school dinners (schools back home started at 7am and ended at 1pm The afternoon was for sporting activities. So, unless we were boarders, we went home for lunch. But since coming to UK (and now living here) I am well aware of the bowls of hot custard with some sponge pudding of a sort swimming in it. One pudding we used to have back home was a steamed pudding - it was cooked in a steaming pot with marmalade in the bottom. Once it was cooked, the marmalade became a thick syrup that dripped down the sides.

  • Just found your channel instant sub. This takes me back a fair few years when school dinners were filling and substantial. Used to be a server in my junior school - two people per table would goto the counter and collect a tray of whatever was for dinner that day then take it back to table and serve it to everyone there - think it was 8 kids per table might have been 10 thinking about it as the trays were quite large. The Corn beef pie with chips n gravy was my favourite followed by chocolate sponge n custard. • I’m American and can’t wait to try this. Looks so yummy!! Just need to pick up some golden syrup as our corn syrup is similar but not quite the same taste. Is custard powder ok for making custard? Otherwise it’s the eggs etc and I’m afraid they will lump up on me while cooking. New sub here. Loving your old style recipes! 💜

  • Is golden syrup the same as what we call corn syrup in Canada?

    @virginiatruyens1687@virginiatruyens16873 ай бұрын
    • It isn't, sorry. Golden syrup and corn syrup are both sweeteners but have different properties and uses: 1. Source: Golden syrup is made from cane sugar, while corn syrup is derived from cornstarch. 2. Flavour: Golden syrup has a rich, toasty, and slightly buttery flavor, whereas corn syrup is milder and more neutral in taste. 3. Color and Consistency: Golden syrup is, as the name suggests, golden in color and has a thick, smooth texture. Corn syrup is usually clear (light corn syrup) or a light golden color (dark corn syrup) and is less viscous. 4. Sweetness: Corn syrup is not as sweet as golden syrup. 5. Uses: Golden syrup is often used in baking, desserts, and as a topping due to its distinct flavor. Corn syrup is commonly used in candy making and baking, and as a sweetener for beverages, due to its ability not to crystallize easily. 6. Availability: Golden syrup is more common in British and Commonwealth cuisines, while corn syrup is widely used in the United States. 7. Shelf Life: Both have long shelf lives, but golden syrup tends to crystallize over time, which doesn't affect its usability but can change its texture. Each syrup has unique properties that make them suitable for different culinary uses. Hope this helps, Rik
