RECIPE
▼材料 Ingredients
Corn Oil 玉米油 45ml
Milk 牛奶 50ml
Cake Flour 低筋麵粉 55g
Egg Yolk 蛋黄 5個
Egg White 蛋白 5個
Salt 鹽 0.1g
Lemon Juice 檸檬汁 2ml
Sugar 砂糖 45g
Whipping Cream 淡忌廉 (淡奶油) 180 g
Icing Sugar 糖粉 18g
▼步驟 Instructions
1. 將蛋白與蛋黃分離,蛋白冷凍約15分鐘
2. 玉米油、牛奶打發攪拌至乳化,倒入過篩的低粉麵粉攪拌均勻,加入蛋黃攪拌均勻
3. 蛋白、檸檬汁,分3次加入細砂糖打發至明顯紋路,不易流動狀態
4. 打發的蛋白分次加入蛋黃糊翻拌均勻,倒入鋪好的油紙的烤盤
5. 放入已預熱烤箱中層,上下火160°C 烤25分鐘,取出放涼
6. 淡忌廉、糖粉/砂糖,打發到不易流動,蛋糕片翻轉到油紙上
7. 抹上淡忌廉,邊緣1/3出堆高一點,借助擀麵杖捲起來,包好油紙冷藏30分鐘定型

  • this recipe is so good, quick tip for people that don't have cake flour for this recipe just take out 1 tbs of the all purpose flour and replace it with 1 tbs of cornstarch ( do this for every 50 grams of flour).
