My easy homemade pizza will be your new favorite way to make pizza at home. Not only is this a foolproof recipe, but this method also produces restaurant-style flavor and texture without a wood-burning oven or any fancy equipment. This dough is similar to an Italian Neapolitan-style pizza: a pleasantly chewy thin crust, speckled in dark spots from baking in a hot oven. Here I use active yeast and 00 flour (a finely milled flour, which is considered the gold standard for pizza and pasta dough, though I’ve included alternatives in the recipe notes) to create a light yet durable crust. The goal is a thin, even crust with lots of brown spots and an even golden-brown color on the bottom of the pizza. The result: a pizza that transports you to Italy.
I top my pizza very simply, using Rao’s store-bought pizza sauce (homemade or store-bought marinara, or sugo, all work well), provolone cheese (mozzarella, of course, works beautifully too), freshly grated parmesan, and fresh basil. The final product is a crispy yet tender dough, and the simple, satisfying Italian flavors of tomato, cheese, and basil. The best part is, the dough can be made in advance and frozen, and the pizza only takes about 10 minutes to cook. Buon appetito!
EQUIPMENT
11-inch pan + a baking tray
INGREDIENTS
The Yeast:
1 packet of active dry yeast (2 1/4 teaspoons or 7 grams)
1 ¼ cups warm water (300ml)
1 teaspoon sugar (5 grams)
The Dough:
3 cups 00 flour, whole-wheat flour, bread flour, or all-purpose flour (450 grams), plus more for dusting
1 teaspoon salt (6 grams)
1 tablespoon olive oil
Additional Toppings:
pizza sauce
slices of provolone cheese or any melty cheese you like
grated Parmigiano Reggiano
fresh basil leaves

You seem to be forgetting that cooking a bread on a pan is only possible on a gas stove. You could probably do the whole pizza in the pan, on the stove if you add a lid? But it needs to be a gas stove and not an induction one. Got it from a chef 👍

I've done that with garlic Naan. Everyone has their own toppings and we just throw it on the grill or in the oven. So much fun!
My dad found that the pizza didn't have the texture he wanted in the oven, so he came up with this exact same idea to put it on a heated pan and THEN in the oven and it works so good he's been doing it for 4 years now. Yall should definitely try this-

That’s exactly what my father does! We don’t have a wooden oven so he usually makes the pizza (and without putting the toppings) he makes sure it’s cooked half from both sides. Than he adds the toppings and puts it in the oven (we also use tandoori oven sometimes). This way he can always freeze them and eat later in the weak.

You're right about the char on the crust! It totally makes the pizza. Most home ovens don't get hot enough to crisp-cook that crust properly and the rest of the pizza gets done before the crust is cooked, leaving a poor soggy floppy crust. Your way nails it! Gets a great flavor & still has nice chew. I start mine in a large cast iron pan on the stovetop, watch the bottom to be sure I don't burn (a little good char, not burn), then transfer to a very hot 475° oven to finish. Works the same. My godfather was the owner of a pizzeria and taught me some stuff when making pizza, he puts the cheese on first and then sauce, although it’s blobs of sauce around. When I tried it, it was delicious. I recommend trying it out, especially for people who aren’t big sauce fans. At your nearest pizzeria you can also ask to just buy a dough, when I buy dough near me it’s 3 dollars. I hope these tips help yall as I am also a pizz lover 🍕

I tried this but I made some changes like I used whole wheat flour and instead of broiling, I air fried it and It was Amazing 🤤
I’ve been doing this for a bit when I’m traveling and I don’t have my pizza oven. I highly recommend finding a 72 hour crusts recipe. The fermentation is well worth the wait
You can even cook it on pan with low flame just u have to do sprinkle some water on pan in every 3-5min so that the bottom of the pizza didn't get that much brownie colour 😊
Great idea. I found a similar trick where I put the pizza all the way down in the oven until crispy from down, then I transfer all the way to up to grill the top

Another tip thats been helpful is if you have a pizza stone or just good pan you can leave it in the over for 60-90 minutes before cooking (w/ the oven heating) and itll cook the bottom of the pizza when u put it in the oven, works pretty decently
The Advantage of the pan method ist the time. If you have left over dough you can make a Pizza in 15 minutes. WE have a pizzaoven and use to make Pizza every sunday. When i come Home in monday i orten make this panpizza. It's quicker ans cheaper as you don't have to Heat an oven for 60 minutes.

For some reason, as a 8th grader during lockdown, I actually learned baking cakes and slowly started making bread pizzas and the ones with readymade bases and I have always preferred the ones made in pans because they're crispy and my family owns a microwave with very complex settings I would try a real fresh dough pizza soon
if it sticks it’s better to just bear with it for a little time as it will stop sticking after some knead. than adding more flower as more flower will make the final product a bit less fluffy. Anyway great recipe!

To make that bottom crust, my mom spreads some powdered corn masa at the bottom of the pizza pan and then she rolls the dough and puts it on the pizza tray and then she just bakes the pizza normally. By doing it like this, the pizza will always have that perfect bottom texture, no matter what
I do something very similar. Instead of using 2 different cooking surfaces I just use a large cast iron. First cooking it on the cast iron on the stove then right into the oven to broil. You can have a nice fluffy chewing crust at home for a fraction of the cost and it really doesnt take much effort.
As a New Yorker I won’t deal with a soggy bottom, this is a game changer for those of us who don’t have professional grade ovens at home 😂

The last time I made a pizza thingy, I made it entirely in the pan. Browned one side a bit, flipped, added the sauce and toppings and browned the other side to almost a char. It was hecking delicious. Also, found out that apples are a nice substitute for pineapples (if you're into pineapple on pizza, totally fine if not, I hate olives personally and it's fine too) if you slice them super thinly. They're a fun addition to the flavour profile.

Hubby is gonna be so impressed! Sidenote….I use a cast iron pan for my naan and it takes it just a notch above nonstick and wonder if you’ve also tried this option? I plan to. The same way you did it…get pan super heated, no oil in the pan, the bread releases when it hits a certain doneness then follow your oven directions.❤️

This is how i make my gluten free pizza (flour and greek yogurt). Cook both sides on the pan, then add toppings and i slide it on to a pizza stone. Will never taste like a regular pizza but its pretty good, even my children love it
This is a known method in Italy, called "metodo combo". Especially used to make Neapolitan style pizza. If you came up with this yourself this means you have a nice understanding of pizza :)
It is a great hack, but, with all due respect, if she uses a rolling pin to stretch the pizza dough, she still needs to learn much about pizza. Using the rolling pin ruins all the work done by the yeast. Also, that amount of yeast looks very bad for your body. It will always be better to let the dough rest for a longer time.
Same technique I've been using for years. It really works.
Looks yummy! I add sprinkle of a corn meal on the bottom and the sides, gives nice crunch and flavour to it. The crust is also better if i spread some olive oil on it before putting in the oven.

I have been doing this with store bought pizza base in oven it doesn't get chared at bottom so I thought to try to char the bottom on stove after cooking in oven but later realised that Charing bottom first and then cooking in microwave is a better solution

Instead of flour when you roll the dough out, you can use cornmeal! It always hit different when I did homemade pizza along with my Paraguayan mother-in-law. I also put a little of olive oil on top before putting my uncooked pizza to the oven. Delicious. 👌✨

I put my left over cold pizza in a pan to get the bottom crispy and sometimes when I am cooking it. I always make my own dough and sauce, I never get pizza from a restaurant anymore.
as much as the Mediterranean is very close to Italy I remember 50 years before there were no pizzerias at all, pizzas were only sold in French pastries made by great pastry chefs at the time the pizzas were square
