Most fish die the same way - slow suffocation in the open air. It’s easy for fishers, but it causes fish tons of stress, and floods their bodies with chemicals like cortisol, adrenaline, and lactic acid. Those chemicals make the fish taste bad, smell “fishy,” and rot quickly.
But there's a better way: a four-step Japanese method called ikejime. It involves sharp knives. And a brain spike.

  • I'm an avid Melbourne FL shore fisherman who's caught more than 25 different Atlantic fish species. I can say for sure that this method results in a much tastier and fresher fish dinner. Especially with oily fish like bluefish and mackerel.

    • @@taitaizozo i am no expert on fish, but I have no reason to believe why not. Things like adrenaline and lactic acid are likely released when freshwater fish suffocate to death as well.

  • Great video, I was a meat processor for nearly 15 years. I can tell if a pig or cow was killed properly as well. Definitely interesting seeing how this is accomplished with fish. If I ever decide to go fishing I will follow this method.

  • Japanese people eat tons of fish, but they don't eat it RAW if it is not killed with ikejime. In Japanese supermarket, raw fish is separated from broiling fish corner.

    • From my observation as a neighbouring Korean national, Japanese people seem to eat curry more often than sashimi (=raw fish) unless one lives in remote islands such as Ogasawara and Hachijo Jima. I was so relieved to find that during my visits to Tokyo for business and pleasure since I am a meat-loving person who has never been grandly fond of raw fish unlike the vast majority of my fellow Koreans. lol

    • It's supposed to smell like the sea, not a fishy, rotten smell. There is a difference. Compare a freshly bought fish to a fish left outside the fridge, on heat, for 3 hrs. You'll notice the difference of "fishy"

  • Just to note, I am japanese and not all the fish in Japan are killed this way. It is quite rare to see Ikejimed fish in markets. One more note, the knife the guy in the video is using is one of the best knive makers in the world called Masamoto. its expensive but its worth it :)

  • I find very awesome techniques of a long time ago and why still make sense use them, but tech is catching up. In Japan they're using water supersatured with oxygen to preserve fish. This is a low cost feature if adopted massively and could provide freshiness flavour for days. Basically a simple piece of equip can introduce so much oxygen through micro an nano bubles that bacteria that rotten the fish could not thrive while immerse.
