Rusty Japanese Knife Restoration Video
I found this knife from Japan recycle shop for $1. This knife is made from harden steel, so take a lot of time to make it sharp. I use longan tree to make the handle. After the restoration, it looks really beautiful I really love it.

    • Single bevel Japanese knives have one seemingly flat side that is really concave, and one side with the bevel. The bevel is meant to cut away from the user, thus the knife in this video is for a right-handed user.

  • 出刃包丁： 魚を捌くための包丁。主に頭を落とし、腹裂き、内臓を取りだし、身と背骨を分離するための包丁です。 Deba knife: This knife is designed to fillet the fish by dropping the neck. It is heavier than other knives to cut fish bones. The shape is wide and thick, and many have a fairly obtuse-angled blade at the edge. There are various sizes, and it is used properly depending on the object to be used. Deba knives of a size that does not fit the target are rather difficult to use. Small and thin ones are also called Ajikiri knives. Generally, it is a single-edged blade, but depending on the region, there are double-edged blades, blades with a smaller width, and blades with a wider cutting edge.

  • How do know if the steel is worth the effort? Can you read the old maker’s mark stamped into the blade? Or are most old knives good steel and it’s only the newer stuff from the 80s 90s that is too cheap/hard/brittle to keep a great edge?

    • Most older knives were made with care, especially from Japan or west europe. So if it fits the timeframe, worth giving a go. If it's a simple non-stainless steel, you can re-heat treat the knife with relative ease yourself if you don't know if it's going to be good enough.

  • It was too beautiful!!! Why didn't you use electrolysis to remove the rust? It's a quick and simple process to do.

    • Electrolosis isn't that quick. It also causes Hydrogen Embrittlement. A wire wheel or a couple passes on that belt grinder would've sped things up immensely.

  • Как раз кольцо на рукоятке и нужно для того, чтобы удерживать хвостовик ножа. А он расширил отверстие потом ещё и двухкомпонентным клеем клеит. За это я бы второй дизлайк поставил.

  • Not sure how to feel about this...... If you are going to go through as much as you did, the least you could do is get the pits out of the blade completely, Via Wet sanding and polishing You go through what you did to show how sharp ??? it was by cutting some paper ??? As if that was some GREAT feat, The least you could do with knives like this that are Signed/Stamped with the makers Mark is get it looking like close to new , and to freshen up the-engraved signature again and make it look better. Now if this was just some pen knife you bought at a flea market so be it, But it is a Stamped/Signed blade. Honor the maker and make it look to as Close to NEW as you can

    • Yes get the pits and make the blade thin as paper. You have never seen a butcher test the sharpness of his blade on paper before.
