Making it now. Just threw it in the oven. Tasted it with the olive oil and salt raw and it’s delicious that way as well. He is right. Go easy on the salt. For some reason you don’t need a lot. I over salted. But will still be delicious. Thank you Chef!
I use to really dislike kale, and found the central stem of the leaf quite horrible, bitter, and chewy. But I will _devour_ kale chips cooked like this. The crispiness really alters it.

Was just wondering about salts. Surely kosher salt, but how about Old Bay. People who avoid junk foods, succumb to BBQ chips. Wish they’d hybrid out that bitter….just a little to smooth out the rough edges. Kale has no equal, it’s a class by itself. Like Jacque.

i always shuck the leaves off of the main stem; because that's what is tough. the rack is a good secret. i use sesame oil for a nicer flavor.

FYI. They crisp up best when laying flat on the rack. Not in a pile. We had to cut back on the salt. Just a light sprinkle did the trick. They do taste good. Thanks

These turn out really good from an air fryer too, if you've got one. My Ninja one came with a cookbook and had a recipe for that in it. I actually season mine with part of a packet of Ranch Dressing mix.
