Can't believe he's 74 years old now. Grew up watching him. Yan can cook was amazing.

@@midengineZ06 I was born in 1970 and loved to watch tv cooking shows. Martin Yan was a favorite and at that time, Asian cuisine was newer in the US but even in my small southern town, we took well to it. We had a great spot called The China Inn and in was nice and considered special enough for eating out even on date nights.. The owners of China Inn grew out of this original location and eventually the third and fourth were highly invested in and became tops on Great Chefs series and plenty attention in local papers. Name and branding changed to Trey Yuen. These four brothers did very well because they kept it not only approachable to us southerners but focused on quality of food and service and intelligent marketing. Their children went to school with us, they donated to our causes and our private schools, they contributed, purchased more real estate and always worked well within our small community. Today, they are very well known restauranteurs and they've passed their businesses to their sons to carry on. but I've digressed lol : I went to culinary school in upstate NY in 1994 and Mr. Martin Yan visited our classroom of 16 students while he was on campus for filming demonstration. Everyone was excited but only those in their mid 20's really knew of him. Anyway, while Martin was saying goodbye and leaving through the door to continue his tour of the school, a "class clown" yelled out, "Yan Can Cook!!" Well, sure enough, Martin Yan stepped back through, smiled so huge and called right back, "And So Can You!!" We laughed for the rest of the day and we revisited the story of Yan Can Cook many times over the following month. hahaha! 🙂 So sorry to carry on with such a long story and post ....but your mentioning of PBS cooking shows really got me thinking of my younger days of coming up. Maybe for these cooking shows early on, I'm still so much enjoying this same foodservice, service industry, restaurant kitchen work today! Over 30 years now and some might even say I've finally kinda gotten the hang of it 😉😉 Cheers to you, friend 🍻

@mfish007 Dude was filming cooking back when they were first discovering you could point camera's at things. His pbs show was part of the cave paintings that the food network drew inspiration from. THE GREATEST OF ALL TIME
@@jeffanderson3424 lmao, if cooking on TV was human civilization, he along with Pepin and Julia Child would be on those cave paintings, bringing light back to the cave to show these people how it's done. Except today.. instead of following in their footsteps, they decide to do this drama/competition CRAP instead. it's infuriating that they're not doing the old school format anymore. They'd rather watch Chef Sara and Chef Linda spew vitriol. Give it another couple of years and we'll be seeing a Chef's husband sleeping with another Chef's wife or some crap like that.

@@shindukess I think it's less so that than it is the rise of reality television. I had a really bad feeling when the Real World and Big Brother sort of television was gaining popularity. By the time the late 90s and early 2000s came around, reality TV was getting much higher viewership than well written shows. People loved trashy drama and it's really really a shame. I have more or less tried my best to avoid any and all reality TV. It decays the mind. (I am painting with a broad stroke though... there are some good ones, but the terrible ones are the most popular)

You can almost taste the disbelief Martin has when this audience doesn't take full advantage of having a master chef in front of them by asking questions.
I can't think of anything to ask him , it was a good lesson.

My dad died from stomach cancer. THANK YOU, Martin Yan, for trying to open people's eyes that what they eat and how much directly affects our health and weight! I've been a Yan Fan since he was on PBS when I was a kid and I so much appreciate he is still sharing his love of GOOD FOOD with us! He is an absolute treasure 💚

The western diet is purely toxic...whether it's by accident or design...you don't need to dive deep to see how truly toxic it is...As a matter of fact...you'll find the same toxic foods in the hospitals where people go to get better.

Never woulda thought 35+ years later, been watching Mr. Yan since I was 5-7, I'd be coming back to my first celebrity chef for Chinese knife skills. I remembered his chicken boning, started looking him up again, still the fastest dude out there, and I found this vid. Btw, go ahead and buy a proper wok range, it's life changing and I would like to see more westerners embrace Eastern cooking techniques, it's worth the journey. Dare you to make some fried rice!
Hell ya! Got my first #1 around that age, still use it! Thing can chop a branch camping, be on the line the next day then still be a home knife now! Chefs used to think i was nuts using it. I would chop circles around them. I’m goin to go cook some corn chowder from stock and because of watching this, it will be my knife of choice today. I like to change up. But today, #1 for the #1.

Yan taught me how to make a sailboat with vegetables on his show when I was a kid.
Yan can cook...and thanks to him in my childhood, so can I.
After watching Martin Yan for over 20 yrs , this is the best of Matin Yan . Love his personality and his performance.

Lived in Hong Kong and Guangzhou province for 7 years , from 1993 to 2000, and as mr Yan stated, the western world has not much of an idea of how these amazing people live, I have eaten alot of delicious food in China, some would make people’s stomach curl 😂, but I never had food poisoning once, even drank water out of the tap, if you have not experienced it you can’t criticise, well done Martin Yan 👍👍Phil from Australia 🇦🇺 🇦🇺🇨🇳🇨🇳
I miss living in Hong Kong! The apartment my wife and I had was in Causeway Bay, very small, but we could walk every place we needed (or take the metro to the Kowloon side). My wife was born in HK, and while I lived there for years, we moved to the US back in ‘18; and, developed a few bad habits. I think it was much easier to cook fresh, or buy fresh, in HK… But, with some effort and planning, we do everything fresh here in the US; bake our own breads, make our own pasta, shred cheeses, to avoid all the chemicals - and, let me say, our bodies feel the difference… Point is, I think convenient packages (stuffed with all sorts of additives) are really the root cause of so many health issue… Frankly, it takes effort, and who wants to bake and cook all the components - and even the so called healthy foods are not that healthy with processing and preservatives!

An absolute legend I used to come home from school as a young kid and watch Yan Can Cook with Chef Martin Yan on PBS and I absolutely loved it.....it was so relaxing to me

I can't believe this man is still around! His was the only cooking show I ever enjoyed watching, and it led to a life time of munching down yummy Chinese food :D
he's a really nice blend between a Chinese and western chef. He cooks like a western chef and his dishes are tailored towards western culture, but he backs it up with a very solid foundation of a Chinese chef.
I grew up watching Yan when he was on KQED/PBS cooking various dishes. I watched, not because of the cooking, but because Yan is very entertaining while doing prep work and I enjoyed counting along when he chop counted. It's all about his passion and the little stories. He looks so young for his age, glad to see him teaching! If Yan can cook, so can you!!!
I remember watching Martin Yan cooking on TV before there was a Food Network. He was one of the pioneers of cooking shows on television. What a legend, still true to his art.
I think he was on PBS, I remember watching him right before lunch if my memory is right!

He is showing off not teaching. For common people who want to learn how to cook decent Szechuan food, I will recommend Wang Gang, he teaches common sense cooking method so people can cook Szechuan food themselves.
@@dragonball41876 these are not normal people in the room. They're people learning to become professionals and become top chefs. You show them basic cooking skills an amateur can do at home and they're gonna think " Is this all he's got? chinese cuisine is easy af"
You can tell he has great passion for what he does. I must say i envy that. The way he talks about his field with so much knowledge and humor. Very entertaining. Great chef, great skills absolutely worth the watch

My friends, at the time, were watching MTV while I was watching Yan, Child, Pepin and Justin Wilson on PBS.
I grown up in Hong Kong with similar diet like Yan, extremely healthy nothing over weight until I live on my own dining out. I tried recently the low carbs and keto diet, blood pressure from 150 to 107 within two weeks without grains feeling relax throughout my body. I think the key is to learn the amount and l don’t strict on carbs.
Just me two cents… It is not so much the carbs as the additives when you buy from the grocery store or chain restaurants… I make my own dough to bake baguettes, pizza, and make my own noodles and pastas… Frankly, I forgot how much healthier that was until my wife and I moved from Hong Kong to the US in 2018 and got into some bad habits due to convenience… But, the pandemic gave us a reason to cook more as even take away is not as healthy here as it was in HK…
He's masterful with a crowd, but he's a firecracker. There's even a few episodes of him being notoriously quick tempered on air. He hid it well, but you can tell some of these people, despite being mixed in with real chefs, were definitely amateurs who asked awkward or pointless questions that came close to getting under his skin.
I used to love watching Martin Yan cook. He always made my believe I could make any Asian dish. His knife skills are next level. Love this post

Really been enjoying watching Mr. Yan's content on KZhead! Glad they uploaded many of his old public access cooking shows. And some of his other TV shows.
My grandma was such a big fan of his Yan can cook show. We used to watch his show every night!

Mr. Yan is a wonderful chef and entertainer. Beyond that you can see and feel his passion for cooking and life. I love that he shares it all.
I literally learned most of my skills from Yan can cook and Wok with Yan. So glad I came across this video. He's always been my main inspiration.
His exposition on different types of proteins was mind expanding and puts a new perspective on what and how to eat. The underlying factor is using the simple ingredients that are available to create a palatable dish. It was a serendipitous find to come across this video. Thanks!

This lecture helped me greatly.. thank you chef martin. I have been trying to better my knife skills and after watching this, not really knowing if things would change, I finally was able to figure out how to rock a knife back and forth .. which is just basics, but still means so much to me

Martin Yan is definitely right on about the people of Vietnam. They are definitely not overweight because I was there 2 years ago. The foreigners and I were the fat ones over there lol.
Welcome to YAN can KOOK! I had to explain to my kids what a huge influence he was on my life. People can understand how I can do such a huge variety of foods when I cook. I owe that the Martin Yan.
As a Vietnamese I'm both proud and sad going through this video. Proud because Chef Yan thinks so highly our cuisine, and sad because nowadays you can actually see many obese people and even kids in the country. I wonder when this was filmed. Anyhow thanks so much for such an insightful video!

Martin Yan is a legend. I used to watch him in the 80s on Yan Can Cook.
Interesting experience watching a world-class chef's work obscured by a dude's head. Yan makes whatever it is he did sound incredibly interesting! If only we could have seen beyond the head.
The camera guy should have either spotted Chef or moved the dude.

I do have a Chinese chefs knife, and it's true that it's super versatile. I use it for literally everything. Even buttered bread with it a few times...as long as i got the knife into the box of butter.

I'm 46 and I've watched Martin Yan when I was a kid.
I watch Martin yan cook since my secondary sch in early 90's. One of my fav chef of all time besides Chef Wan. Both are legend. Food Network Star and food writer is so underrated for Chef Martin Yan.

@ChefMartinYan Good morning. I came across your video addressing the chefs at MSU Denver. You made a few good points. One of them was that people should eat more leafy green vegetables. I grew up watching your show in the early 90s, mostly reruns on PBS. My takeaway from your shows is that it taught me how to prepare food for myself. One of the hardest things in our country, and that is contributing to the obesity epidemic. As a physician, I see this every day and it complicates all aspects of medical care. I hope you continue giving this message to the pubic and to professional [future] chefs and cooks, that we should eat more green leafy vegetables. After all, good food can be easy to make and still be good for us. Thank you.
growing up I watched a lot of cooking shows and martin was the only chinese chef. Thanks to martin for representing chinese on TV.
I know he's a master, I know he's made millions of dishes. But WOW THOSE KNIFE CUTS ARE SO SLOW!!! I'm glad because i can see 1. the process/the cut. 2. that it's okay to go 'slow', in order to get the cut-you want. Edit: In the military they say, "Slow is smooth, smooth is fast." Edit: Plus, he's surely going slower for the students/all of us to-see.
Mr Yan is a great teacher
Great for Master Chef Martin Yan to speak about food and health care, and much of it is deregulation of the food industry, mass processed food, and additives that are chemical, most of them illegal in other countries, this is to make the cheapest food addictive, too much salt, too much fat, too much sugar. Another problem is cost, accessibility to cooking skills, or even the time to cook, all those who work in the food industry should make food safe to eat, healthy to eat, not just attractive on the plate.
Living legend. Love his thoughts on eating less meat and more fiber and veggies.

I watched it twice and loved it
I'm so happy I'm going to learn the work with the Chinese chef knife (aka "cleaver") - the Excellence Knife from Ken Hom. Mr. Yan is a great skilled master. Thank you for uploading this video. Btw: The main camera angle was all about one big HEAD at the place where I should see the working knife of the master.
That head irritated me a lot too!! I was shouting inside my mind move your head man!!
