ARABI ROASTED CHICKEN -
Ingredients:
1-2 whole chickens (you can use however much and whatever kind of chicken you like)
15-20 garlic cloves
7 spice
Garlic powder
5-10 lemons
Salt and pepper
Olive oil
1. Wash and clean your chicken and set in a large bowl and preheat over to 350F
2. Chop your garlic and squeeze your lemons into a small container
3. In a small bowl, combine your garlic, olive oil, 7 spice, salt, and pepper
4. Pour the lemon juice over your chicken and then cover the chicken with your 7 spice mixture
5. Let the chicken marinate for at least 4 hours (overnight is best)
6. When chicken is ready to roast, put it in the oven for 1-1.5 hours or until chicken is done. Cover chicken half way through if needed
GROUND LAMB -
Ingredients:
Ground lamb (for this recipe, we used 1 package of lamb and 1 package of bison)
1 large yellow onion
Garlic powder
Pinch of cinnamon
7 spice
Salt and pepper
Olive oil
1. In a large pot or pan, add your olive oil and sauté your onions
2. Add ground meat and seasoning
3. Continue to mash ground meat until it browns
WHAT WE PUT IN SALAD:
Romain lettuce
Cucumber
Tomato
Fresh garlic
Dried mint
Lemon juice
Olive oil
Salt
